Mutton Biryani

I have more than five biryani recipes in this blog, but this this is my first Mutton Biryani recipe. Mutton Biryani is very special for Muslim cuisines especially for festival occasions and marriages. This preparation is relatively easy and can put together quickly.

Ingredients

For marinating mutton

  1. Mutton/ goat meat              : 500 Gm
  2. ChillI powder :  1 Tbl-sp (adjust)
  3. Turmeric powder : ¼ T- sp
  4. Ginger garlic paste  : 2 T- sp
  5. Curd/yoghurt  : ¼ T- sp
  6. Garam masala : ¼  -T sp
  7. Salt for taste

For biriyani

  1. Basmati rice  :  2 CupS
  2. Water( including stock) : 3 CupS
  • Sliced onion( big) : 1
  • Chopped tomato(small) : 1
  • Sliced chilli : 6 (adjust)
  • Ginger garlic paste  : 2 T sp
  • Garam masala : ¼ T- sp
  • Mint/pudina leaves  : 15-20
  • Oil /ghee  : 3 Tbl –sp (adjust )
  • Salt for taste

Whole masala:-

  • Cardamom 1, star anise1,cloves 3, cinnamon 1 small piece

Method

  • Marinate the mutton pieces into the masala ingredients mentioned for marinating and keep it for an hour.
  • In a pressure cooker add the mutton and cook it until soft (for me it took about 5 whistles, it will vary depends on the meat) .I didn’t add any water while cooking the mutton, if you prefer add ¼ cup of water.
  • Drain the stock and keep it for later use.

  • In a pressure cooker pour the oil/ghee, add the whole masala and fry it one minute.
  • Then add the Ginger garlic paste along with green chilli and fry it for about 3 minutes.
  • Add the sliced onion and fry it until brown color, then add the chopped tomato along with mint leaves and fry it until smashed.
  • Add the cooked mutton and fry it for about 5-6 minutes, then add the garam masala.

  • Add the washed and drained rice to the mutton mix and fry it gently without breaking the rice for about 2-3 minutes.
  • Measure the water and stock together, for 3 cups and add to the rice-mutton mix.
  • Now add the salt and mix everything well.
  • Close the pressure cooker and wait for 1 whistle, after the first whistle reduce the flame to low and cook for another 2 minutes.
  • Switch off the flame and allow it to cool completely .after the pressure released open the cooker and mix the biryani gently.
