Muringappoo thoran

This is a South Indian stir fry preparation with the flower of Moringa (മുരിങ്ങ) along with scrambled eggs. Same like drumstick & drumstick leaves (Muringayila), its flower also contains plenty of vitamins, protein, calcium and potassium. It has lots of nutritional and medicinal values. I have couple of Moringa leaf recipes shared in the past, one for the Thoran and another for Rice.

Ingredients

  1. Moringa flower : 5 Cup
  2. Chopped onion : 1 (Medium)
  3. Green chilly : 5 (Adjust)
  4. Grated coconut : 1 ½ Cup(Adjust)
  5. Jeera                               : ¼ T- Sp
  6. Turmeric : ¼ T-Sp
  7. Egg : 3(optional)
  8. Mustard seeds : ¼ T- Sp
  9. Coconut oil : 1 Tbl- Sp(Adjust)
  10. Dried chilly : 3
  11. Curry leaves
  12. Salt for taste

Method

  • Coarse grind the coconut with jeera and turmeric powder.
  • Heat oil in a kadai/pan, and splutter mustard seeds followed with dried chilly and curry leaves.
  • Add onion, green chilli and salt & sauté it until brown.
  • Then add the moringa flower and saute it for about 1 minute.
  • Add the coconut mixture on top of the moringa flower, then close it and cook (about 4 minute).
  • Open the lid and mix well.
  • Now mix the egg in a bowl and add the same to the thoran.
  • Mix everything well and it and cook it.
  • Finally add a ½ T- Spoon coconut oil and mix everything together.

Tips:-

  • For vegetarians, skip the egg step and follow the other steps.
  • Instead of green chilli, may use chilli powder.
  • Can add 2 cloves of garlic while making the coconut mixture if needed.
