Kappa (കപ്പ) Biriyani is one of the famous delicious preparation of eastern kerala with , which is abundant in Kerala. Its name varies across Kerala, but the preparation is similar with Kappa cooked and combined with meat and masala and seasoned with spices. In this preparation here its delicious mix of smashed kappa with Chicken.

Ingredients:

For Chicken

  1. Chicken                : ½ kg
  2. Ginger Paste /Crushed  : 1 Tsp
  3. Garlic Paste/Crushed       : 2 Tsp.
  4. Chilli Powder      : 1 Tbl. Sp.
  5. Coriander Powder            : 2 Tsp.
  6. Garam Masala    : ½ TSp.
  7. Onion Sliced        : 1
  8. Split Green Chilli : 2
  9. Turmeric Powder              : ½  Tsp.
  10. Salt        : To taste

For Kappa

  1. Kappa                   : ½ kg.
  2. Turmeric Powder              : ½ Tsp.
  3. Salt        : To taste

For Masala

  1. Coconut Shredded            : 1 ½ Cup
  2. Chilli powder      : 1 Tbl Sp.
  3. Turmeric Powder : ½ Tsp.
  4. Coriander Powder            : 1 Tsp.
  5. Curry leaves        : 1 handful
  6.  Mustard              : 1 Tsp.
  7. Green chilli          : 2
  8. Dry red chilli        : 4-5
  9. Oil                         : 1 Tbl Sp.

Method:

  • Cut the Kappa in to small pieces and cook it in a heavy bottomed vessel by adding turmeric, salt and water (enough to cover). Cook in such a way that the kappa is not over mushy.
  • When done, drain the water.
  • Marinate the chicken with all its ingredients for 1- 2 Hrs.
  • Cook the marinated chicken till it absorb the entire water.

  • Crush the masala ingredients (except oil).
  • Heat oil in a pan and mustard, dry chillies and curry leaves till spluttering.
  • Add the crushed masala & sauté it for 4-5 minutes, till the raw smell is gone.
  • Add the cooked chicken & saute it for 2-3 minutes
  • Add the cooked Kappa & mix well while cooking in low flame for 5-6 minutes
  • Finally add the garam masala

Tips:

Instead of chicken, beef, mutton or pork can be used

Spice and oil quantity can be varied to individual taste
