Cheera Aviyal

Cheera Aviyal is a nutritious side dish made with spinach, and your choice of vegetables and coconut masala. In this preparation I used a mix of both Red Spinach and Swiss Chard. Though the choice of  additional vegetables we can have is that we use in the traditional Aviyal recipe, the Spinach pieces to be the dominant.

Ingredients

  1. Red Spinach or/and Swiss chard            : 1 bunch
  2. Jackfruit seeds (cooked)            : 20
  3. Cucumber         : 1
  4. Chayote            : 1
  5. Yogurt. : 1 Tbl -Sp (adjust)
  6. Curry leaves
  7. Salt for taste
  8. Coconut oil        : 2 T- Sp.

For Masala Mix

  • Coconut            : 1 ½ Cup (adjust)
  • Jeera/ cumin seeds       : ¼ T-Sp.
  • Garlic   : 2 cloves
  • Chilly powder    : 1 T-Sp (adjust)
  • Turmeric powder           : ½ T- Sp.
  • Green chilly       : 2

Method

  • Remove the thick stems and cut it into long pieces
  • Roughly chop the leaves.
  • Cut the cucumber, jack fruit seed and chayote in to long pieces.
  • In a mixer, add all the ingredients mentioned for grinding and make a coarse mixture .
  • In a kadai/ pan add the spinach stems along with vegetable pieces ,a pinch of turmeric powder and salt , close the lid and cook.
  • The vegetable we use itself will be oozing some water to cook. If you feel there is not enough water to cook, sprinkle some water.
  • Then add jackfruit seeds and the leaves, close the lid and cook it. Check the water, if there is no water sprinkle some water and cook it.
  • Once it’s cooked add the masala mixture, close the lid and cook it in a slow heat for about 2 more minutes.
  • Then open the lid, and mix it well.
  • Then take it out from the stove and add yogurt and mix it.
  • Finally add curry leaves, coconut oil and close the lid for at least 10 minutes.

Tips: –

  1. I used cooked jackfruit seeds, hence added to the vegetables after the rest of it ts half cooked.
  2. May use your choice of additional vegetables like drum stick, raw banana etc.
