Kerala mixture

Mixture (Sev Mix) is a common crispy snack mix, popular in most of the Indian states with different variations-spice/sweet/sour tastes. The name Mixture comes from the combination of ingredients this snack has in it. The recipe I share here is of mixture (മിച്ചർ)  in its extreme spicy form which is one of the favorite snacks of Kerala.  This is a special preparation in festival occasions and also as a tea time snack since this chilli hot crispy mix goes very well with milk-tea.

Ingredients

For Sev:-

  1. Besan       : 5 cups
  2. Rice powder       : 1 cup
  3. Turmeric powder   : ¼ T sp.
  4. Asafoetida  : 2 pinch
  5. Chilli Powder     : 1 T sp.
  6. Salt as per taste

For Boondhi :-

  1. Besan       : 3 cups
  2. Turmeric powder   ¼ T Sp.
  3. Asafoetida  : A pinch
  4. Oil         : 1 Tbl sp.
  5. Salt as per taste

Other Ingredients:-

  1. Peanuts     2 ½ Cups
  2. Crushed garlic (with skin)    : 12
  3. Curry leaves      : ½ cup
  4. Splitted green chilli   : 8
  5. Chilli Powder, Salt and Hing : as per taste. 

Method

For Sav

  • Mix all the ingredients in the Sev section. Add enough water to make soft yet firm dough.
  • Heat a pan/kadai of oil on medium high heat.
  • Load the String Hopper maker with the dough and press it into the oil in a circular motion. Don’t overcrowd the pan.
  • Fry it till one side is done and flip over. When it is crispy take it out of the oil and place it on a paper towel and let the excess oil drain. This frying is pretty quick and will take only like 2-3 minutes on medium high heat.
  • Repeat the same process until all the dough is finished.
Sev Preparation

For Boondhi

  • Mix all the ingredients in the Boondhi section with water so as to make a batter that flows. (The consistency can be decided with a simple test. The batter should flow through the holes of the spatula on a medium speed. If it flows too fast, then the batter is too thin and if it won’t fall, then the batter is too thick).
  • Once the batter is made, drop it on to the spatula with holes that is held on top of the hot oil and allow dripping into the oil. Don’t overcrowd the pan.
  • Fry till crispy. Drain it onto a paper towel. Repeat with the whole batter.
Boondhi Preparation
  • Then add the peanuts followed by curry leaves and crushed garlic and green chilly to the oil, fry all one by one till crispy and drain it keep aside.
Frying Garlic and Curry leaves
  • Crush the sev  with your hand to make it smaller.
  • Mix the Sev, Boondhi, Peanuts, Curry leaves , garlic, green chilly together
  • Add and mix Salt, Red Chilli powder and Hing(one or two dashes) to the above as per taste.
All ready for final mix
