Here is another delicious way to prepare Squid/Kalamari (കണവ), in Kerala cuisine style. I have previously shared common Kerala style recipes with squid, the squid roast and squid thoran. The preparation in this method is for more dry type dish, making the squid to be served as an appetizer in Malayalee taste.
Ingredients
- Squid / kanava : 1.5 Lb
- Turmeric powder : ¼ T- Sp
- Coconut pieces : 1 Cup (Adjust)
- Salt
For frying
- Sliced garlic : 10 cloves
- Sliced ginger : 1 inch
- Green chilly : 5
- Sliced onion : 1 (Big)
- Curry leaves
- Chilli powder : 2 Tbl- Sp (Adjust)
- Pepper powder : 1 ½ T- Sp
- Turmeric powder : ¼ T- Sp
- Garam masala : ½ T- Sp
- Salt for taste
- Coconut oil : 2 Tbl- Sp (Adjust)
Method
- clean the squid and make medium sized pieces.
- In a pressure cooker, add squid along with salt, coconut pieces and turmeric powder; mix it together. Don’t add any water for cooking, squid itself oozes some water.
- After the first whistle reduce the flame into medium and cook it for another 7-8 minutes or until squid becomes are soft.
- If there is any excess water cook it in a high flame -without lid- and dry it (if you are in a hurry drain the water and keep it aside).
- In a bowl add chilli powder, turmeric powder, pepper powder, curry leaves and salt (check the salt before adding, remember we already put some salt while cooking).
- Add the squid pieces into the above masala and mix it; keep it for about 20 minutes for blending.
- Heat oil in a pan and add the marinated squid and fry it.
- Once the squid is in brown in color, add the sliced onion, ginger, garlic, green chilli and lots of curry leaves.
- Fry it for another 2-3 minutes.
- Finally add garam masala and mix it well.
