Another one dish meal from Mexican Cuisine!. We used to carry burritos as a balanced bite while traveling, locally. Burrito is a type of Mexican food, consisting of a wheat flour tortilla wrapped into a cylindrical shape to completely enclose the filling. Traditional Mexican Burritos will use multiple filling options including beans or rice. Here I used my own selections for filling; a mix of salsa, lettuce, chicken and guacamole.
For ~ 10 Burritos
Ingredients
For tortilla:-
- All purpose flour (Maida) : 2 ½ Cup
- Oil : 2 T sp
- Water for kneading
- Salt for taste
- Chopped lettuce : 2 cup
For tomato salsa:
- Chopped tomato(Medium) : 2
- Chopped Onion ( small) : ½
- Chopped cilantro : 3 Tbl-sp adjust
- Chopped jalapeño : 1 adjust
- Chopped green onion : 1 stem
- Lemon Juice : ½ lemon (Adjust)
- Salt for taste
For Chicken:-
- Boneless Chicken : 250 gm
- Chilli powder : 3 T-sp (adjust)
- Turmeric powder : ¼ T- sp
- Ginger garlic paste : 2 T- sp
- Lemon juice : ½ Lemon
- Oil : 3 T-sp
- Garam masala : ¼ T-sp

Method
For tortilla :-
- In a bowl add a little water and add salt and mix it , then add the all-purpose flour and knead it adding enough water to make a smooth, soft and non-sticky dough .
- Keep it for half an hour.
- Then take big lemon size balls of dough and roll it to thin circle tortilla.
- Heat a kadai/ pan add the tortilla and wait for getting bubbles on the top and flip it and cook until getting light spots on the tortilla. Sprinkle some oil on the top and press it with a paper towel for evenly cooking.
- Do the same process to finish the entire dough- you should get about 10 tortillas out of it
For tomato salsa:-
- Add all the ingredients mentioned for tomato salsa and mix it evenly.
For chicken:-
- Marinate the chicken with the above ingredients for minimum an hour, (preferably overnight in the fridge for best taste).
- Preheat the oven into broil for high mode for about 10 minutes.
- In a greased oven safe dish, broil the chicken for about 10-15 and flip it and broil it for another 10 minutes or until cooked. Cooking time may vary according to the meat you use and the oven.
- Cut the chicken into small pieces.
- In a big bowl add the guacamole, chicken, tomato salsa and chopped lettuce and mix it.
- Take each tortilla and add the mix into one side (see pic) and roll it.
Tips:
If you plan to carry the burritos for travel, use aluminium foil to wrap it and close the ends
