In fact, I got inspiration to start a recipe blog, when I settled with this recipe for the chicken biryani, based on the feedback I got from friends and well-wishers whoever tasted it! As a well-known single dish meal from Indian cuisine, I used to make this whenever we have a guest at home. I am sure you all will like this recipe and the extra effort and time you are going to put to make this dish is going to be paid-off with its mouthwatering aroma and taste\u2026Enjoy !!!!<\/p>\n<p><!--more--><\/p>\n<p><strong>Ingredients\u00a0<\/strong><\/p>\n<p><em><span style=\"font-size: 14px; line-height: 1.6em;\">For Rice:\u00a0<\/span><\/em><\/p>\n<ol start=\"1\">\n<li>Basmati Rice \u00a0 \u00a0 \u00a0 : 4 cups<\/li>\n<li>Water \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : 5 cups<\/li>\n<li>Coconut milk \u00a0 \u00a0 \u00a0: 1 cup<\/li>\n<li>Onion (Sliced) \u00a0 \u00a0: 1 no.<\/li>\n<li>Pasted Ginger, Garlic and Green Chilli\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 :\u00a0 4 T Sp.<\/li>\n<li>Turmeric Powder\u00a0\u00a0\u00a0\u00a0 : 1 pinch<\/li>\n<li>Masalas (Cardamom -2, \u00a0Cinnamon stick -2, cloves -3)<\/li>\n<li>Oil\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : 3 Tbl Sp.<\/li>\n<li>Mint (Puthina) leaves\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : 10 to 15<\/li>\n<li>Salt\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : to taste<\/li>\n<\/ol>\n<p><em>For Chicken:<\/em><\/p>\n<ol start=\"1\">\n<li>Chicken (cutto medium size- 1&#8243;) \u00a0 \u00a0: 1 kg<\/li>\n<li>Chilli powder \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0: 4 T Sp.<\/li>\n<li>Turmeric Powder \u00a0 : 1 T Sp.<\/li>\n<li>Garam Masala \u00a0 \u00a0 \u00a0 \u00a0 \u00a0: \u00bd T Sp.<\/li>\n<li><span style=\"font-size: 14px; line-height: 1.6em;\">Salt \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : To taste<\/span><\/li>\n<li>Pasted Ginger &amp; Garlic\u00a0\u00a0\u00a0\u00a0\u00a0 : 2 T Sp.<\/li>\n<\/ol>\n<p><em>For Masala:<\/em><\/p>\n<ol start=\"1\">\n<li>Chopped Onion\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : 3<\/li>\n<li>Pasted Ginger, Garlic &amp; Green Chilli\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : 4 T Sp.<\/li>\n<li>Tomato \u00a0 \u00a0 \u00a0: 2<\/li>\n<li>Oil \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : 4 Tbl sp.<\/li>\n<li>Mint Leaves\u00a0 : 15<\/li>\n<li>Thick Coconut Milk\u00a0 : 1 cup<\/li>\n<li>Chilli Powder \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0: 2 T Sp.<\/li>\n<li>Turmeric Powder \u00a0 \u00a0 : \u00bd T Sp.<\/li>\n<li>Garam Masala \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0: \u00bd Tsp.<\/li>\n<\/ol>\n<p><b>Preparation <\/b><\/p>\n<p><em>For Rice<\/em><\/p>\n<ul>\n<li>In a pressure cooker, pour the oil and add the masalas and warm for ~2 mts<\/li>\n<li>Add sliced onion and Ginger, Garlic Green chilli paste.<\/li>\n<li>Add turmeric powder and saute till the onion look translucent.<\/li>\n<li>Add mint leaves &amp; salt and saut\u00e9 for 2 mts.<\/li>\n<li>Add water mixed with coconut milk.<\/li>\n<li>Add rice, and mix well.<\/li>\n<li>Close the lid of pressure cooker wait for 1 whistle.<\/li>\n<li>Turn of the stove and keep the cooker on it.<\/li>\n<li>Once pressure down, move the rice to a wide vessel.<\/li>\n<\/ul>\n<p><em>For Chicken<\/em><\/p>\n<ul>\n<li>Marinate the chicken with all ingredients (except oil ), for minimum an hour.<\/li>\n<li>Cook the marinated chicken in a pan- \u00a0closing the lid- until the chicken becomes soft.<\/li>\n<\/ul>\n<p><em>For Masala<\/em><\/p>\n<ul>\n<li>Heat a kadai, pour the oil, add the sliced onion and fry it for ~6 mts.<\/li>\n<li>Add the ginger garlic chilli paste and mix well<\/li>\n<li>Add chilli powder, turmeric powder, mint leaves and fry for another 3 mts.<\/li>\n<li>Add chopped tomatoes and saut\u00e9 for about 20 mts, till the color becomes brown.<\/li>\n<li>Add coconut milk and half cup water to the mix and boil well.<\/li>\n<li>Add the cooked chicken and mix well.<\/li>\n<li>Wait until the Masala becomes thick.<\/li>\n<\/ul>\n<p><em>For Dum<\/em><\/p>\n<ul>\n<li>Take a baking dish and brush it with a little ghee or oil.<\/li>\n<li>Spread alternate layers of rice and masala; starting and ending with rice.<\/li>\n<li>On top, sprinkle a little ghee and garam masala &amp; garnish with chopped mint leaves.<\/li>\n<li>Cover tight with an aluminum foil.<\/li>\n<li>Preheat oven to 350 deg.
