It\u2019s a relatively easy South Indian Payasam variety with grated Coconut and jaggery. It will taste great as a traditional pradhaman (Kearala Pudding) and guaranteed to be Gluten free.<\/p>\n<p>&nbsp;<\/p>\n<p><!--more--><\/p>\n<p><strong>Ingredients <\/strong><\/p>\n<ol>\n<li>Grated coconut : 3 Cup<\/li>\n<li>Jaggery powder : 3 Cup(Adjust)<\/li>\n<li>Water for syrup : 1 Cup<\/li>\n<li>Chovvery (Sabudhana) : \u00bc Cup<\/li>\n<li>Thin coconut milk : 4 Cup<\/li>\n<li>Thick coconut milk : 1 Cup<\/li>\n<li>Ghee : 4Tbl-Sp (Adjust)<\/li>\n<li>Cashews<\/li>\n<li>Raisins<\/li>\n<li>Cardamom powder : \u00bc T- Sp<\/li>\n<li>Chukku (Dry ginger) powder : a pinch<\/li>\n<\/ol>\n<p><strong>Method <\/strong><\/p>\n<ul>\n<li>Melt the jaggery with 1 cup of water and filter it for removing impurities.<\/li>\n<li>Soak the sabudhana for about 20 minutes and cook it until soft.<\/li>\n<li>Heat 2 T- Sp of ghee and saut\u00e9 the grated coconut for about 2 minutes (no need for changing the color).<\/li>\n<li>Add the jaggery syrup and let it boil well.<\/li>\n<li>Stir it continuously and add a little ghee in between until the mixture gets thicken and the color of the coconut changes to jaggery color. It will take about 25 minutes.<\/li>\n<li>Add the 4 cups of thin milk and let it boil; then add the cooked saudhana and cook it for about 10 minutes, you can see the quantity of Pradhaman is slightly reduced.<\/li>\n<li>In a bowl add the cardamom powder and chukku powder, dilute it with 2 Table spoon of coconut milk and add it to the Pradhaman.<\/li>\n<li>Finally add the 1 cup of thick milk and give a good boil and take it out from the flame.<\/li>\n<li>Heat ghee in a pan and fry the cashews and raisins and add to the Pradhaman and mix it.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Coconut Pradhaman (\u0d24\u0d47\u0d19\u0d4d\u0d19\u0d3e \u0d2a\u0d4d\u0d30\u0d25\u0d2e\u0d7b ) is a custom recipe to add to my desert menu.A Payasam\/Pradhman\/ \u0d2a\u0d4d\u0d30\u0d25\u0d2e\u0d7b (pudding) exclusively with coconut!&#8230;.
