It is also considered to be helpful in controlling diabetics, <span style=\"background: white;\">by suppressing the activity of certain enzymes involved in glucose production. The recipe here is a typical Kovakkai stir-fry preparation that goes well as side dish to boiled rice.<\/span><\/span><!--more--><strong>Ingredients<\/strong><\/p>\n<ol>\n<li>Kovakka\/Ivygourd : 2 Lb<\/li>\n<li>Chopped onion : 1 (Big)<\/li>\n<li>Spitted green chilli : 3<\/li>\n<li>Coconut slices : \u00bd Cup<\/li>\n<li>Turmeric powder : \u00bd T- Sp<\/li>\n<li>Crushed chilly : 2 Tbl- sp (Adjust)<\/li>\n<li>Oil : 3 Tbl- sp (Adjust)<\/li>\n<li>Curry leaves<\/li>\n<li>Salt for taste<\/li>\n<\/ol>\n<p><strong>Method <\/strong><\/p>\n<ul>\n<li>Cut the kovakka into 4 pieces( length wise)<\/li>\n<li>Heat oil in a pan and saut\u00e9 the onion and green chilli until the onion became transparent.<\/li>\n<li>Then add the kovakka along with coconut pieces, turmeric powder, crushed chilli and salt; saute it for about 3 minutes.<\/li>\n<li>Then close the pan and cook until kovakka is fully cooked.<\/li>\n<li>Open the lid and stir it in-between to avoid sticking in the bottom of the pan.<\/li>\n<li>Finally add the curry leaves and mix it well.<\/li>\n<\/ul>\n<p><a href=\"http:\/\/pepper2salt.com\/kovaykka-mezhukkupuratty\/kovakka\/\" rel=\"attachment wp-att-3812\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3812\" src=\"http:\/\/pepper2salt.com\/wp-content\/uploads\/2017\/06\/Kovakka.jpg\" alt=\"Kovakka\" width=\"800\" height=\"353\" srcset=\"https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2017\/06\/Kovakka.jpg 800w, https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2017\/06\/Kovakka-150x66.jpg 150w, https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2017\/06\/Kovakka-300x132.jpg 300w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Kovakkai (Ivy gourd) contains beta-carotene, and considered a good source of protein and fiber.
