Here is it, Veg Dum Biryani enriched with Paneer and crispy fried bread pieces. This one course meal is a perfect choice for family gatherings and even for kids lunch boxes \u2026<!--more--><\/p>\n<p><strong>Ingredients <\/strong><\/p>\n<p><em>For rice: &#8211;<\/em><\/p>\n<ol>\n<li>Basmati rice \u00a0 \u00a0 \u00a0: 3 Cup<\/li>\n<li>Chopped Onion : \u00bd of small onion<\/li>\n<li>Ginger \u2013garlic paste : 1 \u00bd T- Sp<\/li>\n<li>Ghee \/oil \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 : 2 Tbl- Sp<\/li>\n<li>Mint leaves \u00a0 \u00a0 \u00a0 \u00a0: 15<\/li>\n<li>Whole garam masala (cardamom 2, cinnamon 1, cinnamon 2, bay leaves 2)<\/li>\n<li>Coconut milk \u00a0 \u00a0: \u00bd Cup<\/li>\n<li>Water \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 : 3 \u00bd Cup<\/li>\n<li>Salt for taste<\/li>\n<\/ol>\n<p><em>For masala: &#8211;<\/em><\/p>\n<ol>\n<li>Chopped onion \u00a0 \u00a0: 1 (small)<\/li>\n<li>Chopped tomato : 1 (medium)<\/li>\n<li>Green chilly \u00a0 \u00a0 \u00a0 \u00a0 \u00a0: 3<\/li>\n<li>Mixed veg \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 : 1 \u00bd \u00a0Cup (potato, carrot, beans)<\/li>\n<li>Paneer \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0: 1 \u00bd \u00a0Cup<\/li>\n<li>Chopped mint \u00a0 \u00a0 : 15 leaves<\/li>\n<li>Ginger-garlic paste : 1 Tbl- Sp<\/li>\n<li>Vinegar\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0: 1 T- Sp<\/li>\n<li>Chilli powder \u00a0 \u00a0 \u00a0: 1 Tbl- Sp<\/li>\n<li>Turmeric powder : \u00bc t-Sp<\/li>\n<li>Garam masala \u00a0 : \u00bd T- Sp<\/li>\n<li>Coconut milk(thin) : 1 Cup<\/li>\n<li>Thick coconut milk : \u00bd Cup<\/li>\n<li>Salt for taste<\/li>\n<li>Ghee\/oil \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 : 1 \u00bd Tbl- Sp(Adjust)<\/li>\n<\/ol>\n<p><em>For seasoning:-<\/em><\/p>\n<ol>\n<li>Thinly sliced onion : 1 (medium)<\/li>\n<li>Cashews : 15<\/li>\n<li>Raisins \u00a0 \u00a0: 20<\/li>\n<li>Bread slices : 2<\/li>\n<li>Ghee\/oil for frying<\/li>\n<li>Ghee for sprinkling<\/li>\n<\/ol>\n<p><strong>Method<\/strong><\/p>\n<ul>\n<li>Wash and soak the rice for about 15 minutes.<\/li>\n<li>Heat oil\/ghee in a pressure cooker and add the whole masala, fry it for about 20 seconds.<\/li>\n<li>Then add the onion along with ginger along with garlic paste and saut\u00e9 the onion till translucent.<\/li>\n<li>Add the mint leaves and saut\u00e9 it.<\/li>\n<li>Dilute the coconut milk with water and add this to the pressure cooker.<\/li>\n<li>Add the rice and salt; mix it.<\/li>\n<li>Close the lid and wait for 1 whistle, then reduce the flame to low and wait for another 1 minute. (this extra 1 minute needed only for gas stove). If you are using coil stove top, only 1 whistle needed, after that switch off the stove and keep it in the stove itself.<\/li>\n<li>After the pressure releases, open the cooker and transfer the rice into a wide plate \/tray.<\/li>\n<\/ul>\n<p><em>Masala:-<\/em><\/p>\n<ul>\n<li>Now heat oil\/ghee in a pan and saut\u00e9 the onion along with ginger-garlic and green chilli, till onions became brown.<\/li>\n<li>Add the tomatoes, saut\u00e9 it until smashed well.<\/li>\n<li>Add the chilli powder and turmeric powder; fry it for a minute.<\/li>\n<li>Add the vegetables along with salt and stir it.<\/li>\n<li>Add the thin coconut milk and close the lid and cook it. Stir it in between to avoid sticking in the pan.<\/li>\n<li>Now add the mint leaves along with paneer pieces and vinegar, close the lid and cook it for another 3-4 minutes.<\/li>\n<li>If there is any excess water, dry it off to make a thick masala.<\/li>\n<li>Finally add the thick coconut milk and mix it. Take it out and keep it aside.<\/li>\n<\/ul>\n<p><em>For dum:-<\/em><\/p>\n<ul>\n<li>Spread oil in an oven safe dish\/tray and put one layer of rice, and after that one layer of masala.<\/li>\n<li>Sprinkle some ghee on top of the masala and spread another.<\/li>\n<li>Repeat this for another layer of masala and rice.<\/li>\n<li>On the top a layer of rice, spread the fried onion, cashews and raisins along with some chopped mint leaves.<\/li>\n<li>Sprinkle ghee and cover tray tightly with aluminum foil\/tray cover.<\/li>\n<li>Preheat the oven into 400 degree Fahrenheit and bake it for about 25 minutes.<\/li>\n<li>Add the fried bread pieces on top at the time of serving the biriyani.<\/li>\n<\/ul>\n<p>Tips :<\/p>\n<ul>\n<li>Before adding to the masala keep the paneer pieces in hot water, it will help the paneer to be soft.<\/li>\n<li>I soaked the rice for about 15 minutes. so I needed total 4 cups of water including coconut milk. The water quantity may vary each rice. Typical ratio is 1 cup rice =1.5 cup of water.<\/li>\n<li>Can adjust the quantity of vegitable and paneer.<\/li>\n<li>Spreading the rice in a wide plate\/tray is very important, it will make the rice non-sticky.<\/li>\n<li>The number of layering of rice\/masala is personal choice.
