The preparation uses cut vegetables cooked in oil with minimal masala unlike other Kerala recipes.\u00a0 This recipe here lists the steps for preparing mezhukkupuratti with cut beans and potato, to have a great &amp; tasty blend of both vegetables.<!--more--><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ol>\n<li>Beans \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : 750 kg<\/li>\n<li>Potatoes : 3 (medium)<\/li>\n<li>Crushed chilli : 1 Tbl- sp<\/li>\n<li>Turmeric powder : \u00bd T- sp<\/li>\n<li>Oil \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : 3 Tbl- sp (adjust)<\/li>\n<li>Sliced onion : 1 (big)<\/li>\n<li>Curry leaves : 2 sprigs<\/li>\n<\/ol>\n<p><strong>Method<\/strong><\/p>\n<ul>\n<li>Cut the beans into ~1 inch long pieces ( I used \u00a0frozen cut beans from grocery store this time)<\/li>\n<li>Slice the potatoes into medium sized pieces (see the pic).<\/li>\n<li>Heat a pan, add the oil and saut\u00e9 the onion for less than 1 minute.<\/li>\n<li>Then add the beans along with potatoes and saut\u00e9 it.<\/li>\n<li>Add the turmeric powder, salt and crushed chilli.<\/li>\n<li>Saut\u00e9 it for couple of minutes and close pan.<\/li>\n<li>Open the lid and stir it in regular intervals, don\u2019t add water into the mix.<\/li>\n<li>Check the salt, if needed add some more salt while cooking, Cooking will be faster with closed lid.<\/li>\n<li>Once the beans and potatoes are cooked and soft enough, add the curry leaves and mix it well before turning the stove off.<\/li>\n<\/ul>\n<p><a href=\"http:\/\/pepper2salt.com\/mezhukkupuratti\/mp11\/\" rel=\"attachment wp-att-3292\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3292\" src=\"http:\/\/pepper2salt.com\/wp-content\/uploads\/2016\/03\/MP11.jpg\" alt=\"MP11\" width=\"800\" height=\"236\" srcset=\"https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2016\/03\/MP11.jpg 800w, https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2016\/03\/MP11-150x44.jpg 150w, https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2016\/03\/MP11-300x89.jpg 300w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Mezhukkupuratti (\u0d2e\u0d46\u0d34\u0d41\u0d15\u0d4d\u0d15\u0d41\u0d2a\u0d41\u0d30\u0d1f\u0d4d\u0d1f\u0d3f) is a very traditional kerala vegitable side-dish preparation, \u00a0that is possible with multiple vegetable options.
