I\u00a0used to have this in my child hood days when Mom put this together as a quick side dish from our own vegetable garden. These leaves are a good source of different types of vitamins, minerals and rich in anti-oxidants, such as alpha-carotene and Beta\u2013carotene which helps to slow down ageing process. Here I am preparing it from leaves collected from my own home garden, and hence is in full confidence on its organic benefits.<!--more--><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ol>\n<li>Pumpkin leaves\/flowers :~ 30 leaves (+ I had couple of flowers too)<\/li>\n<li>Onion chopped\u00a0 : 1 (small)<\/li>\n<li>Green chilly (chopped) : \u00a03<\/li>\n<li>Garlic\u00a0chopped : 3 Cloves<\/li>\n<li>Grated Coconut\u00a0 :1 cup<\/li>\n<li>Jeera\u00a0 : A Pinch<\/li>\n<li>Turmeric powder : \u00bc T-sp<\/li>\n<li>Salt for taste<\/li>\n<\/ol>\n<p>For tempering:<\/p>\n<ol start=\"9\">\n<li>Oil\u00a0 : 1 \u00bd T-sp<\/li>\n<li>Mustard seeds\u00a0 : \u00bc T-sp<\/li>\n<li>Dried red chilli : 2<\/li>\n<li>Curry leaves : 1 sprig<\/li>\n<\/ol>\n<p><strong>Method<\/strong><\/p>\n<ul>\n<li>Wash and clean the dark green pumpkin leaves in water and drain the water well.<\/li>\n<li>Pumpkin leaves have a very small hair-thorn which need to be removed. Take each leaves and roll it with two hands until you feel no thorns on it.<\/li>\n<li>Then finely chop the leaves and flowers.<\/li>\n<\/ul>\n<p><a href=\"http:\/\/pepper2salt.com\/matha-ila-thoran\/matha-ila1\/\" rel=\"attachment wp-att-3001\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-3001\" src=\"http:\/\/pepper2salt.com\/wp-content\/uploads\/2015\/11\/Matha-Ila1.jpg\" alt=\"Matha-Ila1\" width=\"640\" height=\"330\" srcset=\"https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2015\/11\/Matha-Ila1.jpg 640w, https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2015\/11\/Matha-Ila1-150x77.jpg 150w, https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2015\/11\/Matha-Ila1-300x155.jpg 300w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><\/p>\n<ul>\n<li>In a mixer add the coconut along with jeera and turmeric powder; pulse it into a coarse mixture ( don&#8217;t add any water).<\/li>\n<li>In a kadai\/pan add the oil and splutter\u00a0 the mustard seeds and then add dried chilly along with curry leaves and fry it.<\/li>\n<li>Add the chopped onion along with garlic and green chilli; fry it until translucent.<\/li>\n<li>Then add the leaves and saut\u00e9 it for about 2 minutes and close it and cook it for about 3 minutes ( check out in-between to avoid sticking in the pan, if the leaves are dry sprinkle some water or oil)<\/li>\n<li>Now add the coconut mixture into the center of the leaves and close it and cook it for another 1 minute.<\/li>\n<li>Mix the coconut mixture and cook it for about 1 minute.
