Pachadi is made from ripe pineapple and ethappazham (plantain) as its major ingredients and added with sugar (for additional sweet if needed), coconut and seasoning. The recipe I share here is of pineapple pachadi. The consistency of the dish is not too watery and the same time not too dry.<!--more--><\/p>\n<p style=\"text-align: center;\"><span style=\"text-decoration: underline;\"><strong>For typical 40 Servings (Sadya)<\/strong><\/span><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ol>\n<li>Pineapple (medium sized)\u00a0 : 1<\/li>\n<li>Ethappazham (ripe plantain : 2 ( big sized)<\/li>\n<li>Green chilly : 3<\/li>\n<li>Turmeric powder : \u00bc T- sp<\/li>\n<li>Grapes : 25 (adjust)<\/li>\n<li>cashew nuts (chopped) : \u00bc Cup<\/li>\n<li>Sugar : 3 Tbl-sp (adjust)<\/li>\n<li>Coconut\u00a0 : 3\u00a0Cups<\/li>\n<li>Jeera\u00a0 : \u00bd T- sp<\/li>\n<li>Mustard seeds : 1 T-sp<\/li>\n<li>Salt for taste<\/li>\n<\/ol>\n<p><em>For seasoning:<\/em><\/p>\n<ol start=\"12\">\n<li>Oil\u00a0 : 1 Tbl-sp<\/li>\n<li>Mustard seeds\u00a0 : \u00bd T- sp<\/li>\n<li>Red chilly : 3<\/li>\n<li>Curry leaves\u00a0 : 2 sprigs<\/li>\n<\/ol>\n<p><strong>Method<\/strong><\/p>\n<ul>\n<li>Cut the pineapple, plantain and green chilly into small pieces.<\/li>\n<li>Crush the mustard seeds into coarse powder.<\/li>\n<li>Crush the coconut along with jeera.<\/li>\n<li>Fry the seasoning ingredients and keep it aside.<\/li>\n<li>In a kadai\/ pan add the pineapple , ethappazham , green chilli along with turmeric, salt and 1 cup of water.<\/li>\n<li>Close the lid and cook it until soft.
