Aviyal is a thick mixture of vegetables and\u00a0grated coconut, seasoned with\u00a0coconut oil\u00a0and curry leaves.<\/p>\n<p><!--more--><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>Vegetables \u2013 All cut to ~ 1.5 inch long size<\/p>\n<ol>\n<li>Cucumber\u00a0 : 2 Cups<\/li>\n<li>Snake gourd : 2 Cups<\/li>\n<li>Yam( chena)\u00a0 : \u00a02 Cups<\/li>\n<li>Chow chow\u00a0 : 1 Cup<\/li>\n<li>Drumstick\u00a0 : 15 pieces<\/li>\n<li>Pumpkin ( mathanga)\u00a0 : \u00a01 Cup<\/li>\n<li>Brinjal\u00a0 : \u00bd Cup<\/li>\n<li>Winter melon\u00a0 : \u00bd Cup<\/li>\n<li>Long beans (achinga)\u00a0 1 Cup<\/li>\n<\/ol>\n<ol start=\"10\">\n<li>Green chilly (split)\u00a0 : \u00a08 adjust<\/li>\n<li>Turmeric powder\u00a0 \u00a0 \u00a0 \u00a0 1\/2 T sp<\/li>\n<li>Curd\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 1\/4 Cup adjust<\/li>\n<li>Coconut oil\u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 4 Tbl sp<\/li>\n<li>Curry leaves<\/li>\n<li>Salt for taste<\/li>\n<\/ol>\n<p>For grinding:<\/p>\n<ol start=\"16\">\n<li>Grated coconut\u00a0 : 4 Cups<\/li>\n<li>Jeera : 1 \u00bd \u00a0T sp<\/li>\n<\/ol>\n<p><strong>Method<\/strong><\/p>\n<ul>\n<li>In a mixer add the coconut and jeera and pulse it to make a coarse paste, it should be like the masala of thoran\/thoran.<\/li>\n<li>In a kadai\/ pan add half of the oil and add all the vegetables along with turmeric powder and salt.<\/li>\n<li>Mix everything together, close the lid and cook the vegetables (takes ~ 15 min in high flame) . Open the lid and stir it in-between to avoid sticking in the pan. If it is sticking in the pan sprinkle some water while cooking.<\/li>\n<li>Add the coconut and jeera mixture and mix everything together.<\/li>\n<li>Then add 2 Tbl spoon of coconut oil for seasoning and handful of curry leaves.<\/li>\n<li>Switch off the stove and add the yoghurt and mix it everything together.<\/li>\n<\/ul>\n<p><a href=\"http:\/\/pepper2salt.com\/aviyal\/aviyal-steps\/\" rel=\"attachment wp-att-2905\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2905\" src=\"http:\/\/pepper2salt.com\/wp-content\/uploads\/2015\/08\/Aviyal-steps.jpg\" alt=\"Aviyal-steps\" width=\"640\" height=\"477\" srcset=\"https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2015\/08\/Aviyal-steps.jpg 640w, https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2015\/08\/Aviyal-steps-150x112.jpg 150w, https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2015\/08\/Aviyal-steps-300x224.jpg 300w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><\/p>\n<p>Tips:<\/p>\n<ul>\n<li>Increasing the quantity of curry leaves, coconut and coconut oil will get the aviyal more traditional taste.<\/li>\n<li>You may use any vegetable oil for initial cooking but seasoning to be only with coconut oil.<\/li>\n<li>If you are using frozen drumstick and yam first cook it in a separate pan and then add to the vegetables, because it will take more time to cook.<\/li>\n<li>For preparation of tasty aviyal, make sure to use fresh coconut, fresh\u00a0curry leaves and coconut oil for seasoning.
