Ethakka Vanpayar Thoran is an excellent combination with rice porridge (\u0d15\u0d1e\u0d4d\u0d1e\u0d3f) and typically served on prayer gatherings. In this preparation, Plantain (\u0d0f\u0d24\u0d4d\u0d24\u0d15\u0d4d\u0d15) and\u00a0red beans\/chori (\u0d35\u0d7b\u0d2a\u0d2f\u0d7c) blended together with coconut masala. We can see slight variance of preparation from place to place. <!--more--><\/p>\n<p style=\"text-align: center;\"><span style=\"text-decoration: underline;\"><strong>For ~ 10 Servings<\/strong><\/span><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ol>\n<li>Raw Plantain (\u0d2a\u0d1a\u0d4d\u0d1a \u0d0f\u0d24\u0d4d\u0d24\u0d15\u0d4d\u0d15) &#8211; big : 2<\/li>\n<li>Red beans\u00a0(\u0d35\u0d7b\u0d2a\u0d2f\u0d7c) : 500 Kg<\/li>\n<\/ol>\n<p><strong><em>For grinding:-<\/em><\/strong><\/p>\n<ol start=\"3\">\n<li>Coconut : 3 Cups<\/li>\n<li>Jeera\u00a0 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : 1 T sp<\/li>\n<\/ol>\n<p><strong><em>For tempering:-<\/em><\/strong><\/p>\n<ol start=\"5\">\n<li>Mustard seeds\u00a0 : 1 T-sp<\/li>\n<li>Red chilli :\u00a0 3<\/li>\n<li>Curry leaves\u00a0 : 3 sprigs<\/li>\n<li>Oil : 3 Tbl sp<\/li>\n<li>Chopped onion : 1 Cup<\/li>\n<li>Crushed garlic\u00a0 : 1 pod<\/li>\n<li>Crushed ginger: \u00bd inch<\/li>\n<li>Crushed green chilli : 15 (adjust)<\/li>\n<li>Turmeric powder : \u00be T- sp<\/li>\n<\/ol>\n<p><strong>Method<\/strong><\/p>\n<ul>\n<li>Soak the red-beans (vanpayar ) overnight in warm water with 2 Tsp salt.<\/li>\n<\/ul>\n<ul>\n<li>In a blender\/ mixie add the coconut along with jeera and make a coarse mixture (like the masala of thoran).<\/li>\n<li>Cook the red-beans with enough water and salt, cook until the beans is soft ( don&#8217;t smash it).<\/li>\n<li>Drain the water in a colader, keep 1\/2 cup of water from it for later use.<\/li>\n<li>Cook the plantain with enough water, salt and 1\/4 Tsp of turmeric powder till soft, (don&#8217;t smash it) and drain the water.<\/li>\n<\/ul>\n<figure id=\"attachment_2783\" aria-describedby=\"caption-attachment-2783\" style=\"width: 640px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/pepper2salt.com\/ethakka-vanpayar-thoran\/evt1\/\" rel=\"attachment wp-att-2783\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-2783 size-full\" src=\"http:\/\/pepper2salt.com\/wp-content\/uploads\/2015\/06\/EVT1.jpg\" alt=\"EVT1\" width=\"640\" height=\"285\" srcset=\"https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2015\/06\/EVT1.jpg 640w, https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2015\/06\/EVT1-150x67.jpg 150w, https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2015\/06\/EVT1-300x134.jpg 300w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><figcaption id=\"caption-attachment-2783\" class=\"wp-caption-text\">Cooked Plantain and Beans<\/figcaption><\/figure>\n<ul>\n<li>In a kadai\/ pan add the oil and add mustard seeds and let it splutter.<\/li>\n<li>Then add chilli and fry it.<\/li>\n<li>Then add the curry leaves, ginger, garlic and green chilli and fry it for about 2 minutes.<\/li>\n<li>Add the chopped onion along with salt\u00a0 and fry it till translucent .<\/li>\n<li>Now add the turmeric powder and the coconut and jeera mixture and fry it for about 2minute.<\/li>\n<li>Then add the cooked beans and plantain and mix everything well along with the 1\/2 cup of water (saved before)<\/li>\n<li>Close the lid and wait for another 3-4 minutes to blend the masala , beans and plantain together.<\/li>\n<li>Take the lid out and mix it together again<\/li>\n<\/ul>\n<figure id=\"attachment_2785\" aria-describedby=\"caption-attachment-2785\" style=\"width: 640px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/pepper2salt.com\/ethakka-vanpayar-thoran\/ept2\/\" rel=\"attachment wp-att-2785\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-2785 size-full\" src=\"http:\/\/pepper2salt.com\/wp-content\/uploads\/2015\/06\/EPT2.jpg\" alt=\"EPT2\" width=\"640\" height=\"348\" srcset=\"https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2015\/06\/EPT2.jpg 640w, https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2015\/06\/EPT2-150x82.jpg 150w, https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2015\/06\/EPT2-300x163.jpg 300w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><figcaption id=\"caption-attachment-2785\" class=\"wp-caption-text\">Final cooking Steps<\/figcaption><\/figure>\n<p>Tips:-<br \/>\nThe consistency may be varied for individual preference adding less or more water at the end and adjusting the cooking level of the beans<\/p>\n","protected":false},"excerpt":{"rendered":"<p>A delicious vegetable thoran side dish, especially very common in Kerala Christian cuisines.
