It is very commonly served by roadside shops as chilling refreshment during summer season. The traditional recipe uses jelly made out of agar-agar (also known as china grass) in cold syrup prepared out of milk, rose water, sugar. It is typically served with a scoop of ice cream on top. In this recipe here, I used strawberry juice as an alternative to rose water.<\/span><\/p>\n<p><!--more--><\/p>\n<p style=\"text-align: center;\"><span style=\"text-decoration: underline;\"><strong>For 2 Servings<\/strong><\/span><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ol>\n<li>Milk : 3 cups<\/li>\n<li>Sugar\u00a0 : 3 Tbl sp<\/li>\n<\/ol>\n<p><em>For jelly<\/em><\/p>\n<ol start=\"3\">\n<li>Agar agar (China Grass) stick : \u00a05 gm<\/li>\n<li>Sugar : 3 Tbl sp.<\/li>\n<li>Water\u00a0 : \u00a01 \u00bc cup<\/li>\n<li>Vanilla essence\u00a0 : \u00bc T sp.<\/li>\n<\/ol>\n<p><em>For juice<\/em><\/p>\n<ol start=\"7\">\n<li>Strawberry\u00a0 : 15<\/li>\n<li>Sugar\u00a0 : \u00a02Tbl sp.<\/li>\n<\/ol>\n<p><strong>Method<\/strong><\/p>\n<p>Start with making the jelly as it takes longer (~ 90 min)<\/p>\n<ul>\n<li>In a bowl soak the <strong><em>agar agar <\/em><\/strong>with the 1 \u00bc cup of water and leave for about half hour.<\/li>\n<li>Then add the sugar and boil the mix until it dissolved completely<\/li>\n<li>Add the vanilla essence and mix it.<\/li>\n<li>Switch off the stove, pour the mix in a bowl\/mold and allow it to cool completely and then keep it in the fridge for setting the jelly (~ 90 min).<\/li>\n<\/ul>\n<ul>\n<li>In a blender\/ mixie add the strawberry and sugar, grind it into a smooth paste (without water) and keep it into the fridge ( I got 1.5 cup juice).<\/li>\n<\/ul>\n<ul>\n<li>Once the jelly is set, cut it into small pieces.<\/li>\n<li>Mix the sugar and milk together.<\/li>\n<li>In a glass add the jelly pieces and pour \u00bc cup of strawberry juice followed by \u00a0\u00bd \u00a0cup of milk, repeat this until your glass fill completely.<\/li>\n<li>Finally add a scoop of ice cream with your choice.<\/li>\n<\/ul>\n<figure id=\"attachment_2247\" aria-describedby=\"caption-attachment-2247\" style=\"width: 640px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/pepper2salt.com\/jigarthanda\/agaragar_jelly\/\" rel=\"attachment wp-att-2247\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-2247\" src=\"http:\/\/pepper2salt.com\/wp-content\/uploads\/2015\/03\/AgarAgar_Jelly.png\" alt=\"Jelly from &quot;Agar Agar&quot;\" width=\"640\" height=\"415\" srcset=\"https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2015\/03\/AgarAgar_Jelly.png 640w, https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2015\/03\/AgarAgar_Jelly-150x97.png 150w, https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2015\/03\/AgarAgar_Jelly-300x195.png 300w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><figcaption id=\"caption-attachment-2247\" class=\"wp-caption-text\">Jelly from &#8220;Agar Agar&#8221;<\/figcaption><\/figure>\n<p>Tips:-<\/p>\n<ul>\n<li>Quantity of sugar can be increased according to taste ( I kept it as minimum).<\/li>\n<li>If you are not getting agar-agar, can use jelly packet and prepare it with the instructions of the packet.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Jigarthanda (meaning \u201ccool heart\u201d in Hindi)\u00a0is a Tamil beverage specifically to Madurai region.
