In contrast to chicken, Duck and duck egg is generally encouraged in Ayurveda diets due to its know \u201ccold\u201d nature. The recipe here of Duck-Roast is an authentic preparation in Kuttanadu.<!--more--><b>Ingredients<\/b><\/p>\n<ol>\n<li>Duck\u00a0\u00a0\u00a0 : \u00a0 2.5 Kg<\/li>\n<\/ol>\n<p><i>For marinating:-<\/i><\/p>\n<ol>\n<li>Chilli powder\u00a0\u00a0\u00a0 : 1Tbl. Sp.<\/li>\n<li>Turmeric powder\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : \u00bc T sp.<\/li>\n<li>Ginger garlic paste\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : 2 T sp.<\/li>\n<li>Garam masala\u00a0 : \u00bc T sp.<\/li>\n<li>Salt for taste<\/li>\n<\/ol>\n<p><i>For masala:<\/i><\/p>\n<ol>\n<li>Sliced onion (big)\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : \u00a03<\/li>\n<li>Green chilly\u00a0(split) \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : 5<\/li>\n<li>Ginger paste\u00a0\u00a0\u00a0\u00a0 : 1 \u00bd T sp.<\/li>\n<li>Garlic paste\u00a0\u00a0\u00a0\u00a0\u00a0 : 1 Tbl sp.<\/li>\n<li>Chilli powder\u00a0\u00a0\u00a0 : 2 Tbl sp.<\/li>\n<li>Coriander powder\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : 1 Tbl sp.<\/li>\n<li>Turmeric powder\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : \u00bc T sp.<\/li>\n<li>Garam masala\u00a0 : \u00bd T sp.<\/li>\n<li>Oil\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : 3 Tbl sp.<\/li>\n<li>Pepper powder\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : 2 T sp.<\/li>\n<li>Curry leaves use generously<\/li>\n<li>Salt for taste<\/li>\n<\/ol>\n<p><b>Method<\/b><\/p>\n<ul>\n<li>Cut the duck into medium pieces and wash it thoroughly.<\/li>\n<li>Marinate the duck with the above ingredients mentioned,\u00a0 for about 1-2 hours.<\/li>\n<li>Keep a pressure cooker on the stove ,add 2 Tbl sp of oil and add the sliced onions and fry it for about 3 minutes, and add salt.<\/li>\n<li>Add the ginger garlic paste along with green chilli and fry it until the onions become soft.<\/li>\n<li>Add the coriander, chilli, turmeric and pepper powder and fry it about 7-8 minutes in a low\u00a0flame.
