At last I settled with this sweet bakery dish Dhilkush- meaning \u201cmaking mind\/heart happy\u00a0\u201d, which appeared to me well apt for the occasion. \u00a0Dhilkush is basically sweet, soft, buttery bread filled with sweetened coconut, tutti-fruiti and nuts. You can see multiple variants of dhilkush recipe with slightly varying ingredients for filling and richness in appearance in Indian Bakeries.<\/p>\n<p><em id=\"__mceDel\"><!--more--><b>Ingredients<\/b><\/em><\/p>\n<ol>\n<li>All-purpose flour ( Maida\u00a0 )\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : 2 cups<\/li>\n<li>Active dry yeast\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : 1 \u00bd T sp.<\/li>\n<li>Warm milk\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : ~ \u00be cup<\/li>\n<li>Oil \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0: 2 Tbl sp.<\/li>\n<li>Salt\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : A pinch<\/li>\n<li>Sugar\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : \u00a02 Tbl sp.<\/li>\n<li>Egg -white \u00a0 \u00a0: 1<\/li>\n<\/ol>\n<p>For filling :<\/p>\n<ol>\n<li>Grated coconut\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : 1 cup<\/li>\n<li>Chopped cashews\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : \u00bc cup<\/li>\n<li>Tutti-frutti\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : \u00bc cup<\/li>\n<li>Raisins\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : \u00bc cup<\/li>\n<li>Sugar\u00a0\u00a0 : \u00bd cup<\/li>\n<li>Dates (chopped)\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : 5<\/li>\n<li>Cardamom powder\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : \u00bc T sp.<\/li>\n<\/ol>\n<p><strong>Method<\/strong><\/p>\n<ul>\n<li>In a bowl take half cup of warm milk, add the sugar along with yeast and mix it well. Keep it covered for 5-10 minutes , it will rise double in size.<\/li>\n<li>In a vessel add the flour and salt and mix it well, then add the yeast\u00a0mixture and knead the dough, with remaining (~ \u00bc cup) warm milk ,adding little by little to get soft, smooth and non-sticky dough.<\/li>\n<li>Finally add 2 Tbl sp oil and knead it again and keep it in an airtight container for fermentation for about 3 hours.<\/li>\n<li>After three hours the dough should be double in size and become very soft. So make sure to use a\u00a0container of sufficient size .<\/li>\n<\/ul>\n<p><a href=\"http:\/\/pepper2salt.com\/dhil-kush\/p2s-dhilkush1\/\" rel=\"attachment wp-att-1958\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1958\" alt=\"P2S-Dhilkush1\" src=\"http:\/\/pepper2salt.com\/wp-content\/uploads\/2015\/02\/P2S-Dhilkush1.jpg\" width=\"378\" height=\"336\" srcset=\"https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2015\/02\/P2S-Dhilkush1.jpg 378w, https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2015\/02\/P2S-Dhilkush1-150x133.jpg 150w, https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2015\/02\/P2S-Dhilkush1-300x266.jpg 300w\" sizes=\"auto, (max-width: 378px) 100vw, 378px\" \/><\/a><\/p>\n<p>Filling<\/p>\n<ul>\n<li>Keep a kadai\/ pan on the stove and add the coconut and roast it for about 2-3 minutes and then add the sugar<\/li>\n<li>Stir it until the sugar melt completely<\/li>\n<li>Add the rest of the filling ingredients and mix it together and switch off the flame.<\/li>\n<\/ul>\n<p><a href=\"http:\/\/pepper2salt.com\/dhil-kush\/p2s-dhilkush2\/\" rel=\"attachment wp-att-1959\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1959\" alt=\"P2S-Dhilkush2\" src=\"http:\/\/pepper2salt.com\/wp-content\/uploads\/2015\/02\/P2S-Dhilkush2.jpg\" width=\"640\" height=\"345\" srcset=\"https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2015\/02\/P2S-Dhilkush2.jpg 640w, https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2015\/02\/P2S-Dhilkush2-150x80.jpg 150w, https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2015\/02\/P2S-Dhilkush2-300x161.jpg 300w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><\/p>\n<ul>\n<li style=\"line-height: 1.6em;\"><span style=\"line-height: 1.6em;\">Make the dough into four equal parts and\u00a0take one portion and roll it with the help of a roller pin\u00a0about 7-8 inch diameter .\u00a0<\/span><\/li>\n<li style=\"line-height: 1.6em;\"><span style=\"line-height: 1.6em;\">Add the filling in the middle leaving some space at the edges.<\/span><\/li>\n<li style=\"line-height: 1.6em;\"><span style=\"line-height: 1.6em;\">Now Roll dough\u00a0into the same size and gently keep on top of the first one and seal it well on the edges (see the picture). May use a fork for sealing which will be useful for adding some design, same time making the sealing perfect<\/span><\/li>\n<li style=\"line-height: 1.6em;\"><span style=\"line-height: 1.6em;\">Now do an egg wash generously to the top part.<\/span><\/li>\n<li style=\"line-height: 1.6em;\"><span style=\"line-height: 1.6em;\">Keep a baking tray with parchment paper and grease it with oil and keep the pastry on it.<\/span><\/li>\n<li style=\"line-height: 1.6em;\"><span style=\"line-height: 1.6em;\">Do the same process again for remaining dough.<\/span><\/li>\n<li style=\"line-height: 1.6em;\"><span style=\"line-height: 1.6em;\">Preheat the oven for ~ 350 deg F<\/span><\/li>\n<li style=\"line-height: 1.6em;\"><span style=\"line-height: 1.6em;\">Keep the tray in the oven and bake it for ~ 17- 20 minutes<\/span><\/li>\n<\/ul>\n<p><a href=\"http:\/\/pepper2salt.com\/dhil-kush\/p2s-dhilkush3\/\" rel=\"attachment wp-att-1960\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1960\" alt=\"P2S-Dhilkush3\" src=\"http:\/\/pepper2salt.com\/wp-content\/uploads\/2015\/02\/P2S-Dhilkush3.jpg\" width=\"529\" height=\"480\" srcset=\"https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2015\/02\/P2S-Dhilkush3.jpg 529w, https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2015\/02\/P2S-Dhilkush3-150x136.jpg 150w, https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2015\/02\/P2S-Dhilkush3-300x272.jpg 300w\" sizes=\"auto, (max-width: 529px) 100vw, 529px\" \/><\/a><\/p>\n<p><span style=\"line-height: 1.6em;\">Tips:-<\/span><\/p>\n<ul>\n<li><span style=\"line-height: 1.6em;\">While baking open and check the oven after ~15 minutes whether it\u2019s baked enough to golden brown on top, there may be heat variation between ovens.
