The preparation uses cleaned whole fish -typically <a aria-label=\"undefined (opens in a new tab)\" href=\"https:\/\/en.wikipedia.org\/wiki\/Green_chromide\" target=\"_blank\" rel=\"noreferrer noopener\">Karimeen <\/a>(\u0d15\u0d30\u0d3f\u0d2e\u0d40\u0d7b)- covered with a spicy masala, wrapped in banana leaves and shallow fried. I have this recipe here to suite the preparation to the modern kitchen using oven instead of earthen pot and aluminum foil instead of banana leaf, as a variant from the tradition with a little trade-off on its taste and aroma. The fish normally used is Karimeen, which is common in <a aria-label=\"undefined (opens in a new tab)\" href=\"https:\/\/en.wikipedia.org\/wiki\/Kerala_backwaters\" target=\"_blank\" rel=\"noreferrer noopener\">back-waters <\/a>of Kerala, but can use pomfrets (\u0d06\u0d35\u0d4b\u0d32\u0d3f ) or Tilapia as alternatives.<\/p>\n\n\n\n<!--more-->\n\n\n<p><strong>Ingredients<\/strong><\/p>\n<ol>\n<li>Fish \u00a0(Tilapia\/Pomfrets\/Karimeen) \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 : 3<\/li>\n<\/ol>\n<p><em>For marination :<\/em><\/p>\n<ol>\n<li>Chilli powder\u00a0\u00a0\u00a0 : 2 Tbl sp.<\/li>\n<li>Pepper powder : 2 Tbl sp.<\/li>\n<li>Ginger garlic paste\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : 2 T sp.<\/li>\n<li>Turmeric powder\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : \u00bc T sp.<\/li>\n<li>Oil for frying<\/li>\n<li>Salt to taste.<\/li>\n<\/ol>\n<p><em>For masala:<\/em><\/p>\n<ol>\n<li>Chopped onion\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : \u00a02<\/li>\n<li>Chopped tomato\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : \u00bd<\/li>\n<li>Chopped chilli\u00a0 : 3<\/li>\n<li>Ginger garlic paste\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : 2 T sp.<\/li>\n<li>Curry leaves\u00a0\u00a0\u00a0\u00a0\u00a0 : 2 sprig<\/li>\n<li>Garam masala\u00a0 : \u00bd T sp.<\/li>\n<li>Kudampuli \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : \u00a02 piece<\/li>\n<li>Chilli powder\u00a0\u00a0\u00a0 : 2 T sp.<\/li>\n<li>Pepper powder\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : 1 Tbl sp.<\/li>\n<li>Turmeric powder\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : A pinch<\/li>\n<li>Coconut milk\u00a0\u00a0\u00a0 : \u00be Cup<\/li>\n<li>Oil (if needed)\u00a0\u00a0 : 2 Tbl sp.<\/li>\n<\/ol>\n<p><strong>Method<\/strong><\/p>\n<ul>\n<li>Clean the fish and put deep gashes on it.
