I tried applying a non-veg flavor this time with chicken, inspired by the Spanish Burrito taste. Preparation is pretty similar to that of\u00a0<a href=\"http:\/\/pepper2salt.com\/ottada\">Ottada<\/a>, that I recently shared, but with a masala mix for the filling.<\/p>\n<p><!--more--><b>Ingredients<\/b><\/p>\n<ol>\n<li>Wheat flour\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 :2cup<\/li>\n<li>Salt as needed<\/li>\n<li>Water for kneading the dough<\/li>\n<li>Banana leaves for wrapping: cut to ~8\u201d x 8\u201d size<\/li>\n<\/ol>\n<p>For filling<\/p>\n<ol>\n<li>Chopped chicken\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : \u00a02 \u00bd cup<\/li>\n<li>Chopped onion\u00a0 : 1<\/li>\n<li>Ginger paste\u00a0\u00a0\u00a0\u00a0 : \u00bd T sp.<\/li>\n<li>Garlic paste\u00a0\u00a0\u00a0\u00a0\u00a0 : 2 \u00bd T sp.<\/li>\n<li>Chopped green chilli\u00a0\u00a0\u00a0\u00a0 : 3<\/li>\n<li>Chilli powder\u00a0\u00a0\u00a0\u00a0 : 3 T sp.<\/li>\n<li>Turmeric powder\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : \u00bc T sp.<\/li>\n<li>Oil\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : 3 T sp.<\/li>\n<li>garam masala \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a01\/4T sp<\/li>\n<li>Salt for taste<\/li>\n<\/ol>\n<p>For marinating<\/p>\n<ol>\n<li>Chilli powder\u00a0\u00a0\u00a0\u00a0 : 1 T sp<\/li>\n<li>Turmeric powder\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 : \u00bc T sp.<\/li>\n<li>Salt as needed<span style=\"line-height: 1.6em;\">\u00a0<\/span><\/li>\n<\/ol>\n<p><a href=\"http:\/\/pepper2salt.com\/wp-content\/uploads\/2014\/03\/Pepper2Salt-Chicken_Ottada.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1213\" alt=\"Pepper2Salt-Chicken_Ottada\" src=\"http:\/\/pepper2salt.com\/wp-content\/uploads\/2014\/03\/Pepper2Salt-Chicken_Ottada.jpg\" width=\"640\" height=\"339\" srcset=\"https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2014\/03\/Pepper2Salt-Chicken_Ottada.jpg 640w, https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2014\/03\/Pepper2Salt-Chicken_Ottada-300x158.jpg 300w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/a><\/p>\n<p><b>Method<\/b><\/p>\n<ol>\n<li>Marinate the chicken with the listed ingredients for about an hour.<\/li>\n<li>Heat a kadai \/ pan and pour the oil.<\/li>\n<li>Add the onions along with ginger, garlic paste and green chilli.. Add a little salt at that time for easy frying.<\/li>\n<li>Once the onion is slightly changed the color add \u00a0the chilly powder and turmeric powder and fry it for about 3-4 minutes,then add the marinade chicken on to it.<br \/>\nStirring occasionally, without covering the pan<\/li>\n<li>Adjust the salt for your taste<\/li>\n<li>Cook the chicken until to get a dry mix of chicken (see the picture).<\/li>\n<li>finally add the garam masala and mix it properly and switch off the stove.<\/li>\n<\/ol>\n<p><a href=\"http:\/\/pepper2salt.com\/wp-content\/uploads\/2014\/03\/p2s-CO1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1217\" alt=\"p2s-CO1\" src=\"http:\/\/pepper2salt.com\/wp-content\/uploads\/2014\/03\/p2s-CO1.jpg\" width=\"597\" height=\"480\" srcset=\"https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2014\/03\/p2s-CO1.jpg 597w, https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2014\/03\/p2s-CO1-300x241.jpg 300w\" sizes=\"auto, (max-width: 597px) 100vw, 597px\" \/><\/a><\/p>\n<ol>\n<li>In a vessel add the wheat flour along with the salt.<\/li>\n<li>Add a little water at a time for kneading the dough and make a soft and smooth dough.<br \/>\nThe dough should be looser than chappathi dough.<\/li>\n<li>Take lemon sized dough and keep it on the center of the banana leaf.<\/li>\n<li>Spread it with your fingertips (see picture). Dip the finger in water in between, this will make the flattening easier.<\/li>\n<li>Spread the chicken mix on top of the dough.<\/li>\n<li>Fold the leaf (see picture) and seal well.<\/li>\n<li>Heat a tawa\/ dosa pan , once it is really hot keep the ottada.<\/li>\n<li>Once the side is cooked \u2013 ie when the color of banana leaf will be changed to dark brown and banana leaves separates from the dough- flip it into the other side and wait for the same cooking state.<\/li>\n<\/ol>\n<p><a href=\"http:\/\/pepper2salt.com\/wp-content\/uploads\/2014\/03\/p2s-CO2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1218\" alt=\"p2s-CO2\" src=\"http:\/\/pepper2salt.com\/wp-content\/uploads\/2014\/03\/p2s-CO2.jpg\" width=\"558\" height=\"480\" srcset=\"https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2014\/03\/p2s-CO2.jpg 558w, https:\/\/pepper2salt.com\/sindhus-kitchen\/wp-content\/uploads\/2014\/03\/p2s-CO2-300x258.jpg 300w\" sizes=\"auto, (max-width: 558px) 100vw, 558px\" \/><\/a><\/p>\n<p>Tips:-<\/p>\n<ul>\n<li>Using coconut oil will enhance the taste of chicken.<\/li>\n<li>Quantity of oil and spices according to individual taste.<\/li>\n<li>Here I used boneless\u00a0 and skinless chicken breast piece<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Here is a variant of the conventional Kerala-Wheat Ottada recipe.
