A quick recipe for a complete one dish meal of Chinese origin.  Veg-Fried rice wasn’t very common in our traditional Kerala cuisine’s in the past, but now a days has become a favorite dish for family gatherings and weddings. The recipe uses non-sticky rice and bunch of vegetables along with common spices. You can make it more delicious (and of course more Indian), using ghee instead of oil and adding some fried cashews & raisins towards the end.

Ingredients

For rice

  1. Basmati rice      : 2 ½ cup
  2. Water               : 3 ¾ cup
  3. Salt for taste

For Vegetable

  1. Chopped carrot                        : ¾ cup
  2. Chopped beans                        : ¾ cup
  3. Chopped bell pepper    : ¾ cup
  4. Chopped cabbage        : ¾ cup
  5. Pepper powder             : ½  T sp.
  6. Soya sauce                   : 2 ½ T. sp.
  7. Garlic paste                  : 2  T sp.
  8. Oil                    : 1 ½  Tbl sp.

Method

  1. In a pressure cooker add the rice, water along with salt.
  2. Keep the stove/heater setting for high temperature.
  3. Wait for one whistle and switch it off, and keep the cooker in the stove/heater.

Note: If you are using the gas stove, after first whistle low the flame and keep it for another 2 minutes.

  1. After the pressure releases completely, move the rice to a wide vessel for cooling down.
  2. Keep a kadai / pan on the stove add the oil.
  3. Add the vegetables along with the garlic paste.
  4. Stir everything, after 3 minutes add the pepper powder and soya sauce.
  5. Add enough salt, since we already put salt in the rice , adjust the salt here.
  6. Once the vegetables cooked (don’t be over cook itt should be slightly crunchy), add the cooked rice to that and mix everything well.

Tips:-

  • You can use any other method for cooking the rice . But make sure to don’t overcook the rice.
  • Instead of oil you can add ghee.
  • Add cashews and raisins fried in oil/ghee, for rich taste towards the end
  • Vegetable quantity also very according to individual’ preference.\
  • Quantity of oil/ghee may be varied for individual’ taste.
