Here is a custom recipe for a delicious dessert dish in Kerala Pradhaman style. A blend of vegetables, fruits and Dal, this jaggery sweat dish is a perfect choice for festivals and family/friend get together occasions. May try it out with vegetables and fruits of your preference if you want a variety dessert dish for your dinner gathering.
Ingredients
- Finely chopped carrot : 1.5 Cup
- Finely chopped pumpkin : 1 Cup
- Finely chopped snake gourd : 1 Cup
- Finely chopped mango : 1 Cup
- Ripe plantain – Cut to small pieces : 1
- Sabudhana (Chovvery) : ¼ Cup
- Jaggery : 750 Gm(Adjust)
- Split moong dal : ¼ Cup
- Coconut milk (thin) : 8 Cup
- Coconut milk (thick) : 2 Cup
- Cardamom powder : ½ T-sp
- Dried ginger powder : ¼ T-Sp
- Jeera powder : a pinch
- Ghee : ½ Cup(Adjust)
- Cashew nuts & raisins
Method
- Melt the jaggery with 2 cup of water and filter it for removing impurities.
- Cook the moong dal and keep it aside.
- Soak the sabudhana for about 20 minutes and cook it until soft and keep it for later.
- In a thick bottom pan/kadai, add 4 table spoon of ghee and sauté carrot, snake gourd, mango and pumpkin for about 10 minutes or until the raw smells goes.
- Then add 2 cup of water and cook until soft, don’t make it smash. If you see any extra water in the vegetable, dry it.
- Add the jaggery syrup and let it boil well, then add the plantain along with the cooked dal.
- Stir it continuously and add a little ghee in between until the mixture gets thicken and the color of the veggies are like jaggery color. It may take about 75 min .
- Add the 8 cups of thin milk and let it boil, then add the cooked sabudhana and cook it forabout 10 minutes, you can see the quantity of pradhaman is slightly reduced.
- In a bowl, add the cardamom, jeera, dried ginger powder along with 2 table spoon of thick coconut milk and dilute it; add the same it to the pradhaman.
- Then add the thick coconut milk give, a good boil and take it out from the stove.
- Finally, heat ghee in a pan; fry the cashews and raisins and add to the pradhaman.
Tips: –
- Peel the skin of carrot, pumpkin, snake gourd, plantain and mango before chopping.
