Tomato Rice (தக்காளி சாதம் ) is a spicy and tasty rice preparation from the South Indian cuisines which is a quick fit for lunch box, for kids and elders. This mixed rice preparation is a combination of cooked rice with ripe & juicy tomatoes and traditional Indian spices. This great one-dish meal if needed can be served with pappads to make the dish more enjoyable to kids !!!
Ingredients
- Basmati Rice : 1 cup
- Tomato : 3
- Green chilly : 5-6
- Garlic : 1pod
- Ginger : 1 Small piece
- Turmeric : ½ tsp
- Water : 1and quarter cup
- Mint : One handful
- Onion : Half, sliced
- Cloves : 2
- Cardamom : 2
- Bay leaf : 1
- Salt : As required
Method
- Soak the rice for 15-20 minutes
- Blend tomato green chilly, ginger, garlic, in a fine paste
- Pour 2tbs oil in a pressure cooker
- Add cardamom, clove, bay leaf , turmeric & mint
- Put the sliced onion and stir it for 3 minutes
- Pour the tomato juice and stir until the mix become thick( will take about 10-15 mts)
- Add water, rice and salt
- Close the lid and wait for one whistle
- Switch off the stove (for gas stove, switch –off after ~1 mnt after the whistle).
