Squid or Calamari (കണവ ) is a popular sea food variety worldwide. It is commonly eaten in Kerala. In Kerala cuisines, its prepared either as masala or with shredded fried coconut (പീര ). Squid is a good food source of minerals such as iron, zinc, manganese & copper.
The recipe here is that of Squid masala, which is a semi-hot gravy preparation goes well as side dish to rice or Kappa (Tapioca).
Ingredients
- Squid. : 1 kg
- Chopped onion : 2
- Chopped Green chilli : 2
- Chopped Tomato. : 1
- Curry leaves. : 3 strig
- Chopped garlic. : 2-3 Tbsp
- Chopped ginger. : 1 ½ Tsp
- Oil. : 3 Tbsp
- Salt to taste
For Masala
- Chilli powder. 2 Tbsp
- Turmeric powder. 1 Tsp
- Coriander powder. 2 Tsp
- Pepper powder. 1 Tsp
Method
- Dry roast the masala ingredient until it becomes a nice brown color for the masala.
- Clean and cut the squid in round (ring) shape
- Pressure cooks the squid along with alittle salt & turmeric powder. (No need for add the water, the squid itself ooze the water.)
- Heat a pan (kadai) on the stove and pour the oil
- Once the oil is hot, add the chopped onions along with ginger , garlic and green chilli .
- Saute it until the color changes to brown.
- Add the tomato pieces.
- Fry for another 2 to 3 minutes.
- Add the dry roasted masala mix and fry for another 4 to 5 minutes in a low flame. (Watch to not to burn the ingredients).
- Add the cooked squid along with the water (water oozed out from the squid while cooking).
- Mix everything very well.
- Close the lid and allow it to cook for another 3-4 minutes
- Finally add the curry leaves just before turning the stove off.
