Parippuvada (പരിപ്പു വട) , I would say, is the most popular tea time snack of Kerala. It’s a crispy and medium-spice snack made out of coarse ground Channa Dal (കടല പരിപ്പ് ) added with a few spices, & fried -traditionally- in coconut oil.
Ingredients
- Channa Dal (കടല പരിപ്പ് ) : 1 cup
- Dry Red Chilli : 3 or 4
- Turmeric powder : ¼ T sp.
- Asafetida : 1 pinch
- Curry leaves : A few
- Garlic with skin : 4 to 5 clove
- Onion chopped : ¼
- Rice Flour : 1 Tbl Sp.
- Oil – for frying
- Salt to taste
Method
- Soak the channa dal along with chilli for 3 hours
- Keep aside 2 Table spoon channa daal ( for adding towards the final mix)
- Drain the water completely and make a coarse mix of the rest of the daal and chilli along with turmeric powder (see picture-1)
Make sure not to grind too much, only need to be crushed
- Crush the garlic and mix this with all ingredients (except oil), along with the reserved whole socked dal to the dal mix.
- With wet hand, make lemon size balls of the mix.
- Press each balls with the palms to get to the shape of a disc ( as in picture)
- Heat oil in a deep pan, once the oil is hot to near boil, add the vada (3-10 vadas at a time depending on the pan size)
- Fry the vada on medium heat, flipping the vada in between, till it becomes crispy and golden brown in color.
- Drain the oil and move the cooked ‘Vada’s to a paper / paper towel.
- Serve hot along with Tea
