Moringa leaves (മുരിങ്ങ ഇല) are rich in β carotene (seven times than the spinach) Calcium, Phosphorus, Ascorbic acid (Vitamin C) and moderate amount of Iron. Recent studies have found that both β – carotene and ascorbic acids are anti-oxidants which help to protect the body from infections, heart attacks and cancers. They are a very good source of calcium and phosphorus with low levels of oxalate, making the calcium potentially better absorbed. Although the iron content in drumstick leaves is moderate, the iron absorption is higher as they have higher levels of ascorbic acids which enhance iron absorption.
Ingredients
1. Chopped Moringa leaf : 4 Cups
2. Chopped Onion : ½ Cup
3. Red Chillies (Halved in to two) : 3 Nos
4. Mustard seed : ½ T-Sp
5. Grated Coconut : 1Cup
6. Cumin Powder : ½ T-Sp
7. Turmeric Powder : 1/2 T-Sp
8. Green Chilli : 4 nos
9. Garlic : 4 pod
10. (Coconut) Oil : 1 Tbl Spoon.
Method:
Coarse grind ingredients 5 to 9 and keep aside.
Heat oil in a pan, add mustard seeds and red-chillies .
Once mustard seed start spluttering, add chopped onions and fry it until color changes
Put the chopped moringa leaves & sauté for 2-3 mts and close the lid to ~ 10 mts till it cooked
Pour the grinded ingredients to the cooked leaf and stir well.
Close the lid and cook for another 2-3 mts
