Long Beans (Achinga Payar) is a common beans variety in Kerala garden vegetables. Thoran (mix of fine cut vegetable in dry coconut masala) prepared with long beans is a delicious vegetable side option in regular diet and also a part of feasts (Sadya). Recipe here is that of authentic style Achinga Payar thoran prepared with coconut masala.
Ingredients
- Long beans : 2 lb
- Chopped onion : 1 big
- Coconut : 2 Cup (Adjust)
- Jeera : ½ T- Sp
- Turmeric powder : ½ T- Sp
- Green chilli : 5 (adjust)
- Garlic cloves : 3
- Oil : 5 Tbl- Sp(adjust)
- Mustard seeds : 1 T- Sp
- Curry leaves few
- Deied red chilly : 4 (adjust)
- Salt for taste
Method
- Chop the long beans into small pieces and keep it aside.
- Grind the coconut along with jeera, garlic, turmeric powder and green chilly into a coarse mixture (pulse it for about 5 second).
- Heat oil in a pan and splutter mustard seeds; add the red chilly and fry it.
- Add the chopped onion and a little salt ; saute it until soft.
- Add the long beans and saute it for a minute.
- Then close the lid and cook it. Open the lid and stir it in a frequent interval to avoid sticking in the pan. If it is too dry sprinkle some water.
- Once the long beans is done (don’t overcook the it) add the coconut mixture in the center and close it about 1 minute.
- Then add salt and mix everything very well.
- Add the curry leaves and stir it properly for about 50 seconds and take it out.
Tips:-
- Typical cooking time for beans is ~15 min, may vary with beans type.
- More Coconut and coconut oil will give the dish more taste.
- Instead of green chilli, can add chilly powder .
