Lemon Rice – a popular and delicious south Indian rice recipe prepared along with lemon juice and some additions. Works well and taste great, while you can make it in easy steps even in a hurry. Can be a handy & hassle-free lunch-box option for young’s and old. Another plus with Lemon rice is that, it can be served even as a single dish-meal, though it goes very well with a pappad (പപ്പടം) in tradition or even with add-ins, veg or non-veg.
Ingredients
1. Cooked Rice (Basmati/medium grain ): 3 cup
2. Lemon juce : Of 1 large lemon
3. Chopped Ginger : 1 T-Sp.
4. Chopped Green Chilli : 5 – 6 (to taste)
5. Peanut (dry roasted ): ¼ Cup
6. Channa Dal : 1 T-Sp.
7. Urud Dal : 1 T-Sp
8. Mustard : ½ T-Sp
9. Dried Red Chilli : 3-4
10. Asfoetida (Hing) :1 pinch
11. Curry leaves : 5-6 leaves
12. Turmeric Powder : 2 pinches
13. Oil : 2-3 T-Sp.
14. Salt : to taste
Method:
- Add the lemon juice & salt to the cooked (not over cooked) rice.
- Heat the oil in a pan, add ingredients 5 to 9, fry to light brown
- Add green chilli, ginger, curry leaves to the pan and fry for ~2- mts
- Add Turmeric & Hing, and turn off the stove.
- Pour rice to the pan and mix thoroughly.
Tips: Oil , lemen & chilli quantity can be varied for individual taste
