Kara Sev

 

Kara Sev (Kara Seva) is a spicy-hot variant of the kerala snack dish, madhura seva (മധുര സേവ). Kara Sev, where “Kara” denotes “heat /spicy” in Tamil and Sev is referrers to fried noodles made from flour. The spice-heat in this dish comes from Pepper which is the key ingredient, along with besan and rice flours. Kara Seva is generally made during festivals, but can also be enjoyed as a tea time snack, as it goes well with milk-tea same like Kerala mixture.

Ingredients

  1. Besan  flour            :5 cups
  2. Rice flour        : 1 cup
  3. Chilli powder  : 2Tsp
  4. Pepper powder            : 1 Tsp
  5. Garlic paste    : 2 T sp.
  6. Asfoetida        : 2 dashes
  7. Turmeric powder        : ¼ T sp.
  8. Butter              : 1 Tbl sp.
  9. Salt for taste
  10. Water for kneading the dough
  11. Oil for frying 

Method

  • Mix all the ingredients using enough water to make soft yet firm dough.
  • Heat a deep-bottom pan/kadai with oil on medium high heat.
  • Load the String Hopper maker with the dough and press it into the oil in a circular motion. Don’t overcrowd the pan.
  • Fry it till one side is done and flip over. When it is crispy take it out of the oil and place it on a paper towel and let the excess oil drain. This frying is pretty quick and will take only like 2-3 minutes on medium high heat.
  • Repeat the same process until all the dough is finished.
