Fish fried rice, another one dish meal recipe from indo-Chinese cuisine. The preparation is a mix of fried fish finger fillets along with rice and vegetables, blended with sauces to get the Chinese touch and flavor. I used readily available Tilapia fillets here for this recipe. You may use the fish fillets of your choice or shrimp, following the same process.

Ingredients
For fish :
- Fish fillets : ½ Kg
- ChillI powder : 1 Tbl-sp
- Turmeric powder : ½ T-sp
- Ginger garlic paste : 1 T-sp
- Salt for taste
- Oil for frying
For Rice:
- Basmati rice : 3 Cups
- Water : 4 ½ Cup
- Capsicum (big, cut sliced to finger style) : 1
- Spring onion : 3 stems
- Green peas : ½ Cup
- Chopped onion(big) : 1
- Chopped ginger :1 T-sp
- Chopped garlic : 2 Tsp
- Chilli sauce : 1 Tbl-sp
- Soya sauce : ½ Tbl-sp
- Pepper powder : 1 T-sp (adjust)
- Oil : 3 T-sp
- Salt for taste
Method
- Cut the fish into strips (finger style)
- Marinate the fish with chilli powder, turmeric powder, ginger- garlic paste and salt.
- Keep it for an hour in the fridge.
- Then shallow fry the fish pieces.
- In a pressure cooker add the rice, salt and 4.5 cups of water and cook it for one whistle and reduce the flame for another 2 minutes and switch off.
(This is the method I normally used to cook my basmati rice. You can cook the rice with any method. Make sure rice shouldn’t be sticky or smashed. The grain should be separate.)
- In a big tawa/ pan add the oil along with the ginger garlic ,fry it until the color starts changing (~ 1 min)
- Then add the onion and fry it for about 4 minutes.
- Then add the capsicum and peas and fry it for another 3 minutes.
- Now the spring onion and fry it for a minute.
- Add the soy sauce, chilli sauce and pepper powder.
- Then add the cooked rice and mix it gently without breaking the rice.
Check the salt and adjust if needed.
- Finally add the fried fish pieces and gently mix it without breaking the
fish pieces, then turn off the stove.
