Egg Bajji

 

Bajji is an easy to make snack recipe where the filling is dipped in a batter prepared from Besan/ gram flour or Maida. These oil fried snack is perfect for evening tea accompaniment. Egg Bajji, as the name says, the filling is sliced boiled eggs and gives this traditional snack a rich protein touch.

Ingredients

  1. Hard Boiled egg      : 8
  2. Maida (all-purpose flower)  : 1 cup
  3. Corn flour      : 2 tbl sp
  4. Green Chilly : 3
  5. Ginger          : small pieces
  6. Onion           : 2 tbsp
  7. Garlic            : 3 cloves
  8. Curry leaves
  9. Fennel powder        : A big pinch
  10. Water : 1 cup
  11. Kashmiri chilly powder.      : 2 T-Sp. (Adjust)
  12. Turmeric powder.    : 1/8 T- Sp.
  13. Salt
  14. Tomato ketchup      : ½ T -Sp.
  15. Oil for frying

Method

  • Slice each egg into 4 pieces, make sure to keep the yolk in each piece.
  • Finely chop onion, ginger, garlic and curry leaves.
  • In a bowl add Maida along with turmeric powder, fennel powder, chilly powder and mix it.
  • Then add some water and mix it again.
  • Now add the chopped ingredients along with salt and tomato ketchup.
  • Adjust water to make a semi thick batter.
  • Heat oil in a pan, once the oil is hot, reduce to medium flame .
  • Coat the egg pieces into the batter and put it into the oil.
  • Deep fry egg pieces on medium flame and fry until gold color.
