Chilli chicken is a side-dish of dry chicken and gravy made of variety of sauce and pieced vegetables. This popular Indo-Chinese dish is very common now-a-days in restaurants in Kerala and other south Indian states. As the name indicates, it is rich in chilli-spice hot and is an excellent side dish to go with dishes like Malabar Parotta and Chapati. The preparation varies from kitchen to kitchen and a dry form of Chilli-chicken is also very common.

Ingredients

For chicken

  1. Chicken           : 1 kg
  2. Pepper powder     : 2 T sp
  3. Ginger garlic paste     :2 Tbl sp.
  4. Chilli paste      : 2 Tbl sp.
  5. Soy sauce         : 1 Tbl sp.
  6. Chilli sauce      : 2 Tbl sp.
  7. Tomato sauce      : 1 Tbl sp.
  8. Egg               : 1
  9. All-purpose flour : 4 Tbl sp.
  10. Corn flour        : 3 Tbl sp.
  11. Salt for taste
  12. Oil for frying

For sauce

  1. Onion             : 3
  2. Bell pepper       : 1
  3. Spring onion      : 1 bunch
  4. Chilli sauce      : 4 Tbl sp.
  5. Soy sauce         : 1 Tbl sp.
  6. Vinegar           :1 Tbl sp.
  7. Tomato sauce      : 1 T sp.
  8. Ginger garlic paste     : 2Tbl sp.
  9. Green chilly paste      : 2 Tbl sp.
  10. Pepper powder     : 2 T sp.
  11. Corn flour        : 4 T sp.
  12. Water             : 2 Cups
  13. Sesame oil        : 2 Tbl sp.
  14. Oil               : 2 Tbl sp.
  15. Salt for taste

Method

  • Marinate the chicken with the ingredients for chicken, except oil.
    Keep the chicken minimum one hour for marinating( I kept it for 4 hours).
  • Keep a deep bottom kadai/pan and pour the oil.
  • Once the oil is hot, fry the chicken until the color become brown.
  • Cut the onions, bell pepper (capsicum ) into square piece.
    Heat a kadai/ pan and add the oil .
  • Add the ginger, garlic and green chilly past and fry it for 2 minutes or until the raw smell gone.
  • Add the onions and fry till the onions become translucent. Add enough salt at this point.
  • Add the capsicum and fry it for another 2-3 minutes.
  • Add the spring onion and fry it for another 1 minute (keep some spring onion for adding towards the end).
  • Add the pepper powder, soy, tomato ,green chilly sauces and vinegar.
  • Mix the corn flour with the water and pour it and let it boil well.
  • Finally add the fried chicken and allow it to boil.
  • Mix everything well and add the spring onion.

Tips:-
Here I used boneless chicken breast.
Adjust the ingredients according to individual taste.
