Here is a variant of the conventional Kerala-Wheat Ottada recipe. I tried applying a non-veg flavor this time with chicken, inspired by the Spanish Burrito taste. Preparation is pretty similar to that of Ottada, that I recently shared, but with a masala mix for the filling.
Ingredients
- Wheat flour :2cup
- Salt as needed
- Water for kneading the dough
- Banana leaves for wrapping: cut to ~8” x 8” size
For filling
- Chopped chicken : 2 ½ cup
- Chopped onion : 1
- Ginger paste : ½ T sp.
- Garlic paste : 2 ½ T sp.
- Chopped green chilli : 3
- Chilli powder : 3 T sp.
- Turmeric powder : ¼ T sp.
- Oil : 3 T sp.
- garam masala 1/4T sp
- Salt for taste
For marinating
- Chilli powder : 1 T sp
- Turmeric powder : ¼ T sp.
- Salt as needed
Method
- Marinate the chicken with the listed ingredients for about an hour.
- Heat a kadai / pan and pour the oil.
- Add the onions along with ginger, garlic paste and green chilli.. Add a little salt at that time for easy frying.
- Once the onion is slightly changed the color add the chilly powder and turmeric powder and fry it for about 3-4 minutes,then add the marinade chicken on to it.
Stirring occasionally, without covering the pan - Adjust the salt for your taste
- Cook the chicken until to get a dry mix of chicken (see the picture).
- finally add the garam masala and mix it properly and switch off the stove.
- In a vessel add the wheat flour along with the salt.
- Add a little water at a time for kneading the dough and make a soft and smooth dough.
The dough should be looser than chappathi dough. - Take lemon sized dough and keep it on the center of the banana leaf.
- Spread it with your fingertips (see picture). Dip the finger in water in between, this will make the flattening easier.
- Spread the chicken mix on top of the dough.
- Fold the leaf (see picture) and seal well.
- Heat a tawa/ dosa pan , once it is really hot keep the ottada.
- Once the side is cooked – ie when the color of banana leaf will be changed to dark brown and banana leaves separates from the dough- flip it into the other side and wait for the same cooking state.
Tips:-
- Using coconut oil will enhance the taste of chicken.
- Quantity of oil and spices according to individual taste.
