Kale, also known as borecole, is one of the healthiest vegetables on earth. The taste of Kale Thoran is close to that of Moringa leaf (which is another known powerhouse of nutrients). A leafy green, kale is available in curly, ornamental, or dinosaur varieties. Kale is rich in fiber, calcium, vitamin B6, magnesium, and also excellent source of antioxidant vitamins A, C, and K. It is also a good source of minerals such as copper, potassium, iron, manganese, and phosphorus.

One thing to be cautious while using Kale (which is another similarity of kale to Moringa leaf) is that, it contains oxalates that can interfere with the absorption of calcium. Avoid eating calcium-rich foods like dairy- at the same time as kale to prevent digestion problems.

Ingredients:-

  1. Stem removed Kale- chopped fine     : 1 bunch
  2. Grated coconut         : 1 cups
  3. Green chillies chopped      : 3
  4. Chilly powder                      : ½ T Sp.
  5. Garlic                              : 4 cloves
  6. Turmeric powder         : ½ tsp
  7. Onion (finely chopped)       : Half
  8. Jeera.                                    : a pinch

For seasoning

  1.       Mustard seeds.         : 1 T sp
  2.       Dry  red chillies        : 3
  3.       Curry leaves.            : a spring
  4.       Salt.                            : to taste
  5.       Oil                               : 2tsp

Method:-

  • Grind grated coconut, turmeric powder, green chillies, jeera ,chilly powder and garlic into a coarse mix and keep aside.
  • Heat oil in a pan and add mustard seeds into it.
  • Allow it to splutter, then add  red chillies, curry leaves & stir well
  • Add chopped onions, a little salt and fry for 2-3 minutes until the onion color changes brown.
  • Add the chopped Kale and stir for about 3 minutes
  • Sprinkle some water on top of the kale and salt and mix again.
  • Keep the stove on low-flame, close the lid and cook for about 15 to 20 minutes (Make sure to , open the lid and stir the mix in every 4-5 interval to avoid sticking of bottom layer to the pan)
  • Keep the coconut in middle of the kale (see picture), and close the lid again.
  • Allow to cook for another 2-3 minutes, to get rid of the raw smell of coconut.
  • Finally mix everything together, and allow another 2-3 minutes cooking with open lid to evaporate excess water content to have the thoran dry.
  • Add salt,stir and cook until all the water evaporates and thoran becomes dry.
