Here is another traditional festival snack recipe known to be “Chakli” in Hindi, which is a soft Murukku version prepared with “Boiled Urud Dal”. Unlike the traditional Murukku recipe the dough here is prepared with cooked and pasted Urud-Dal (ഉഴുന്ന്), which gives majority of the taste to it. The rice flour added to the dough attributes to crispness for it, which makes it child-friendly.
Ingredients
- Urud dal : 1 Cup
- Rice flour : 4 Cups
- Salt for taste
- Oil for frying
Method
- Wash and soak the urud dal for about 1 ½ hours.
- In a pressure cooker add the dal along with 1 ½ cup of water and pressure cook it for about 3-4 whistles or until soft.
- After the pressure is released, open the cooker and let it cool completely .
- In a mixer, add the dal and make a fine paste, add water if needed while grinding.
- In a big vessel add the rice flour , salt and the ground urud dal and knead it well.
- Add enough water to make soft and smooth dough.
- In a deep bottom pan, heat enough oil for frying.
- Fill the murukku presser with dough ( I used sev maker stencils ).
- Once the oil is hot , reduce the heat into medium and squeeze the dough into the hot oil.
- Once it is fried enough on one side and flip it and fry the other side. (Adjust the heat into medium and high)
- Once fried, take out the murukku and keep it to a strainer/kitchen towel.
Tips:
- Can add chilli powder, hing , jeera and sesame seeds to the dough according to personal interest.
- If you added extra water for grinding, don’t bother, you can add rice flour to get the consistency back.
Keep the murukku into airtight dubba to preserve it for long.
