Chakka Pori

Chakka Pori

Banana Fry  or Pazham Pori (Sweet banana dipped in batter and fried in oil) is a very popular tea-time snack of Kerala. Chakka (ചക്ക -Jack Fruit) Pori is a variant of this popular tea-time snack, using pieced Jackfruit Bulbs (ചക്ക ചുള) instead of banana. Tastes great and the crispness of the fried batter makes this a wonderful snack /dessert. Make sure to use the firm version of the Jack fruit (വരിക്ക ചക്ക) for this preparation.

Method

  • Remove the seeds from the jackfruit bulb and make it into pieces (I made 3-4 pieces).
  • In a bowl add the maida, wheat flour, turmeric powder, rice flour and baking soda.
  • Mix it with a spoon for getting everything together.
  • Now add a little water at a time and make a smooth batter, without any lumps .
The batter should be thick enough to hold around the jackfruit ( not too thick or thin).
  • Rest the batter for ~30 minutes.
  • In a deep bottom pan, heat enough oil.
  • Now dip each jackfruit pieces into the batter and cover it completely.
  • Deep fry it in the oil in batches, flip it half way, until the color becomes light golden on both sides. Do not overcrowd the pan.
