This time I share a quick vegetarian side dish with Egg Plant (Brinjal -വഴുതനങ്ങാ). Nutritionally, this vegetable is low in fat, protein, and carbohydrates. Same time Brinhal contains reasonable amounts of most essential vitamins and minerals. In this dry form recipe, I used sliced brinjal with some masala spices to pan fry to make it a healthy dish.It should go well with steamed rice or chapatti as a low calorie accompaniment..

Ingredients

  1. Brinjal     : 10 nos.
  2. Chilli powder     : 2 T sp.
  3. Turmeric powder   : ½ T sp.
  4. Fennel powder     : ¼ T sp.
  5. Salt for taste
  6. Oil for frying  ( pan/tawa fry)

Method:

  • Cut the brinjals in round thin shape. Keep the slices in water (see figure) to color change. Once you finished cutting then drain the water.
  • In a wide vessel put the chilli , turmeric , salt and fennel powder together and pour a little water to make a paste.
  • Add the slices into the paste and mix it thoroughly. Make sure the masala get in into each piece.
  • Keep a tawa/ pan on the stove and pour a little oil and spread it.
  • Keep the brinjal slices onto the pan (see figure) and let it roast medium flame.
  • Once it’s roasted flip it and roast the other side. The entire cooking in medium flame should take about 5 minutes.

Tips:-

  • Fennel powder is optional. You can alternate with garam masala or can skip it.
  • The quantity of ingredients may vary individual taste.
  • Instead of pan fry you can do deep fry also.Here I used my dosa pan for pan fry.
  • If you are not able to mix the masala in a single batch, make the masala in a bowl and take the each pieces and rub the masala individually with your fingers or the help of a brush.
