Here is a quick snack recipe using aval.  Aval -Flattened rice (also called beaten rice) is a dehusked rice which is flattened into light dry flakes. It is used to make various breakfast and snack verities in Kerala and other South Indian states. The recipe I share here uses fried aval which can be mixed with sugar, jaggery and nuts make a quick snack to go well with tea or coffee.

Ingredients

  1. Aval (flattened rice)     : 1 1/2 cup
  2. Grated Coconut              : 1 cup
  3. Oil (Or Ghee)                   : 1 1/2  T sp.
  4. Cadamon Powder         : 1 pinch
  5. Cashew nut & raisins (Optional)

Method

  • Keep a pan (kadai) on stove and pour the oil (ghee)
  • Add the aval and fry it until it become crispy  in medium flame (about three minutes)
  • Add the coconut and fry for about another 2 minutes
  • Add the cadamon powder and mix well and take the kadai out of stove.
  • Fry the nuts and raisins in little ghee or oil and garnish the fried aval.

Serve it with jaggery or sugar along with hot tea or coffee.
