Here is another useful custom recipe for Brahmi (ബ്രഹ്മി- வெள்ளார கீரை) after my previous chutney recipe…… This time for making a sweet dish with this great nutritious leaf, for making it more enjoyable for Kids. The Halwa –same like any other similar halwa dish- can be preserved for days in the fridge. Feel free to add more jaggery if your kid like more sweet. This halwa can be served as a dessert or as an evening snack.
Ingredients
- Brahmi leaves : 5-6 Cup
- Coconut milk : 1 can
- Raw rice : ¾ Cup
- Jaggery : 1 ½ Cup
- Ghee : 4 Tbl sp.
- Water : 3 -3½ cup
Method
- Soak the rice for 3-4 hours
- Grind the rice in to a smooth paste (use a little water at a time while grinding )
- Grind the Brahmi leaves using enough water ( add a little water at a time, water will helps to grind the leaves easily).
- Boil 2 ½ cup of water and add jaggery. Once it dissolved completely filter it
- Wait till the jaggery syrup is cooled well.
- Combine the rice paste , jaggery syrup , coconut milk and brahmi juice in a heavy bottom kadai/ pan.
- Mix everything well without any lumps.
- Keep the kadai on the stove in medium flame and stir well.
- Keep on stirring the mixture, don’t stop stirring otherwise it will stick and lumps will form.
- Once the mixture thickens and water evaporates, pour the ghee, a little at a time.The ghee is oozing from the halwa and it swirl.
- Take off the kadai from the stove
- Grease a tray with ghee. Pour the halwa in the tray and level it.
- Grease a spatula with ghee and level the halwa (greasing the spatula will avoid sticking the halwa on to the tray).
- Keep it for completely cooling. I kept the halwa in room temperature for overnight .
- Cut it on your desired shape.Tips:-
- If you are using the fresh coconut milk use minimum one coconut
- Quantity of ghee, jaggery and coconut milk may be varied to individuals taste.
