A tasty blend of two healthy vegetables, prepared in Kerala thoran (dry vegetable side dish) style. Finely chopped Cabbage and Broccoli is cooked with masala prepared of grated coconut. Consider this preparation to be mixed with boiled rice or even as a side dish to the rice in conventional manner.
Ingredients
- Cabbage : 200 gms
- Broccoli : 200 gms
- Onion : 1 (big)
- Green chilli : 5 (Adjust)
- Coconut : 2 Cup (Adjust)
- Turmeric powder : ½ T –sp
- Garlic cloves : 2
- Jeera : ¼ T – Sp
- Mustard seeds : ½ T -Sp
- Urud dal : 2 T- Sp
- Whole red chilli : 3
- Curry leaves
- Oil : 1.5Tbl –Sp (Adjust)
- Salt for taste
Method
- Chop the cabbage and broccoli to fine size pieces (May use a food chopper for getting perfect size). Mix both well and keep aside.
- Finely chop the onion.
- In a mixer add the coconut, green chilli, jeera, garlic along with turmeric powder and make a dry and coarse masala mixture.
- Heat a pan and pour the oil, add the mustard seeds and let it splutter.
- Add urud dal and fry it until it turn brown followed by whole red chilli and curry leaves.
- Then add the chopped onion and sauté it until translucent.
- Add the coconut mixture and sauté it for about a minute.
- Add the cabbage and broccoli along with enough salt.
- Sauté it until cooked (still crispy).
Tips:-
- Don’t close the pan for the entire cooking.
- After adding the cabbage and broccoli the typical cooking time is about 5 minutes in medium flame
