A relatively easy laddu/ladu (ലഡ്ഡു) recipe, made of aval (അവൽ) /rice-flakes, still tasting to its name. These can quickly be prepared for serving for family gatherings and festivals. It can be preserved in normal temperature for 3-4 days. Using jiggery (ശർക്കര) for sweetening makes these laddus a healthy snack option for kids.
Ingredients
- Aval (rice flakes) : 3 Cup
- Coconut : 1 ½ cup
- Raisins&cashews : ½ Cup
- Jaggery : 4 cubes ( ¾ cup – adjust)
- Water : ½ Cup
- Cardamom powder : ¼ T-sp
- Ghee : 1 ½ T-sp
Method
- In a pan /kadai dry roast the aval until crispy.
- Now move the aval into a plate.
- Dry roast the grated coconut for about 3-4 minutes; keep it aside
- Add ghee in to the pan and fry the cashews and raisins.
- Wait for it to cool completely, and make a coarse powder.
- Now add the jaggery and water to the pan; make the syrup and filter it.
- In a big bowl, add the powdered mixture, cardamom powder and mix it.
- Then pour the warm jaggery syrup a little at a time and mix it well.
- Make medium sized laddu balls out of the mix.
Tips:
– Jaggery syrup quantity may vary according to the type of aval mix, may sprinkle some milk if needed for adjusting the consistency.
