Here is a quick Garam Masala (Indian spice) mix recipe to go in to my Masala Mix Category.Garam masala is a blend of ground spices common in Indian cuisines. It is used alone or with other seasonings in multiple side & main dish recipes. The word garam refers to “heat” in the Ayurvedic sense of the word, meaning “to heat the body” as these spices, in the Ayurvedic system of medicine, elevate body temperature.
Ingredients
- Fennel seeds (പേരും ജീരകം) : ½ cup
- Cloves (ഗ്രാമ്പു) : 50
- Cardamom(ഏലക്ക) : 50
- Star anise (തക്കോലം) : 2
- Cinnamon(പട്ട) : 2
- Peppercorns(കുരുമുളക്) : 1 ½ T-sp
- Bay leaves (വയണ ഇല) : 2
Method:
- In a dry pan/ Kadai add the fennel seeds and dry roast it for about 3 minutes in a low – medium flame, until you get the nice aroma of the fennel.
- Take it out and keep it in a plate.
- Then add the other ingredients together and roast it for about 2 minutes.
- Take it out and keep it in the plate.
- Allow it to cool completely and then make a fine powder.
Tips:
- The mix can be preserved for 3-4 months.
- Use airtight container and always use dry spoon to take the masala.
