Fried Sesame Balls – Jin Deui

Jian dui (Fired Sesame Ball) is a chewy Chinese fried snack dish made from glutinous rice flour. It is coated with sesame seeds on the outside to give the crispiness. Some varieties of Jian Dui come with hollow inner part without any filling. The recipe I share here uses filling with a tasty mix of sugar and lentil.

For 12 to 14 Balls

Ingredients 

  1. Oil for frying

For outer layer :-

  1. Glutinous rice flour  : 1.5 Cups
  2. Sugar          : 3 Tbl-sp (adjust)
  3. Warm water for kneading the dough : ~ ½ cup ( + adjust)

For Filling:

  1. Moong dal     :  1/2 Cup
  2. Coconut         :  1/4 Cup
  3. Sugar              :  1/4 Cup adjust

For covering :-

  1. Sesame seeds   : 1/2 Cup adjust

Method

  • Dilute the sugar ( listed for outer layer) into the warm water.
  • In a bowl add the glutinous rice flour and pour the sugar water a little at a time into the flour and make a soft and non-sticky dough.
  • Keep it for about 15 minutes.
  • Now cook the moong dal until soft, but not smushy .Drain the water completely (ensure no water left)
  • Add sugar, coconut and smash it to a thick paste.
  • Make medium size of balls with the paste, for filling.
  • Take a small portion of rice flour and flatten it with your fingers and add the moong dal filling ball and seal it without any cracks. Shape it with your palms like a ball.
  • In a plate, add the sesame seeds and roll the rice ball over the seeds to make a coating.
  • Keep a kadai/ pan and add enough oil , once the oil is hot fry the sesame balls until brown color.
