Banana Fry or Pazham Pori (Sweet banana dipped in batter and fried in oil) is a very popular tea-time snack of Kerala. Chakka (ചക്ക -Jack Fruit) Pori is a variant of this popular tea-time snack, using pieced Jackfruit Bulbs (ചക്ക ചുള) instead of banana. Tastes great and the crispness of the fried batter makes this a wonderful snack /dessert. Make sure to use the firm version of the Jack fruit (വരിക്ക ചക്ക) for this preparation.
Ingredients
- Riped jackfruit bulbs : 10
- Maida/ all-purpose flour : ½ Cup
- Wheat flour/ atta : ¼ Cup
- Rice flour : 2 ½ Tbl- sp
- Baking soda :A pinch
- Water : ~ ¾ Cup
- Sugar( optional) for taste
- Oil for frying
Method
- Remove the seeds from the jackfruit bulb and make it into pieces (I made 3-4 pieces).
- In a bowl add the maida, wheat flour, turmeric powder, rice flour and baking soda.
- Mix it with a spoon for getting everything together.
- Now add a little water at a time and make a smooth batter, without any lumps .
The batter should be thick enough to hold around the jackfruit ( not too thick or thin). - Rest the batter for ~30 minutes.
- In a deep bottom pan, heat enough oil.
- Now dip each jackfruit pieces into the batter and cover it completely.
- Deep fry it in the oil in batches, flip it half way, until the color becomes light golden on both sides. Do not overcrowd the pan.
