Palak (Spinach) dal (lentil) curry is a great nutrition balanced recipe, blending spinach (vitamins & minerals), lentil (protein and starch) along with health benefit of ingredients like garlic. Ingredients
- Spinach (big) : 2 bunch
- Chopped Green chilly : 6
- Salt for taste
- Toor dal : 1 cup
- Turmeric powder : A pinch
- Garlic cloves : 3
For grinding
- Coconut : 1 cup
- Jeera : ¼ T sp.
- Turmeric powder : ¼ T sp.
For Tempering:
- Oil : 2 ½ T sp.
- Mustard seeds : ¼ T sp.
- Dried red chilly : 3
Method
- Clean the spinach, wash it thoroughly and then keep it in a colander for draining the water.
- Chop the spinach roughly.
- Grind the coconut, jeera and turmeric powder in to a smooth paste.
- In a pressure cooker, add the washed toor dal along with garlic and a pinch of turmeric powder and 1 ½ cup of water , put the lid and cook for about 2-3 whistle or until cooked well.
- After the pressure released, open the lid and smash it nicely.
- In a kadai/pan add 1 T-sp of oil and add the spinach along with green chilli and salt ,sauté it for about 2 minutes.
- Close the lid and cook it for about 5-7 minutes. Make sure to stir it in-between
- The leaves itself oozes some water , if there is not enough water add half cup of water and cook it.
- Then dilute the cooked dal with one cup of water and add it to the spinach.
- Allow it to boil, then add the coconut paste and add enough water ( I used altogether 3 cups of water. Adjust the water to have a medium thick consistency).
- Let it boil for about 2-3 minutes and switch off the flame.
- In a small kadai/ pan add the 1.5 Tsp of oil and add the mustards and let it splutter, then add chilli and curry leaves and fry it.
- Add this to the spinach curry and mix it.
