Ari murukku (Rice –Murukku) a popular crispy snack of South India, an unavoidable delight for festivals like Divali, Krishna Jayanthi and Onam etc. Its served some time as a tea-time snack for guests and for friends gatherings. Generally it is made in spiral shape prepared with is a mix of rice floor and urudu-dal powder, but has many variants of it from place to place, with added ingredients.
Ingredients
1. Fine Rice flour: 2cup
2. Urad dal flour ( roasted and ground) : 1/2 cup
3. Butter : 3 Tbl Sp.
4. Asafoetida : 1/4 tsp
5. Chilly powder : 1 tsp
6. Turmeric. : 1/2 tsp
7. Salt and water : As needed
8. Oil : For deep frying
Method
- Mix flours with melted butter, asfoetida, chilly ,turmeric powder &salt.
- Mix well and then add water to make a non-sticky dough with no cracks.
- Heat the oil in a kadai, enough to deep fry the murukku.
- Fill the murukku-press with the dough with murukku-hole-plate (star shaped stencil).
- Grease some square shape aluminum foil or plastic sheet and press the dough in murukku shape.
- Drop them in oil & deep fry in medium flame.
- Cook both sides until murukku turn golden in color.
- Cool down completely before storing them in airtight containers.
