Another one dish meal from Mexican cuisine! Chalupa in traditional Spanish style is a tortilla made by pressing a thin layer of dough around the outside of a small mold, in the shape of a boat. It is then filled with various ingredients such as shredded chicken/meat, chopped onion, cheese, lettuce  guacamole, and salsa.

Ingredients

Filling Mix: (the quantity and selection can be adjusted for individual taste)

For salsa:-

  1. Tomato      : 2
  2. Onion       : 1
  3. Jalapeño  pepper  : 2
  4. Cilantro (chopped)      : ¼ Cup
  5. Lemon       : ½
  6. Salt for taste

Method

  • Chopped the tomato, onion and pepper into small pieces.
  • In a bowl add the chopped ingredients.
  • Add enough salt and lemon juice. Mix everything together.

Tips: Adjust the lemon juice according to taste.

For Guacamole:-

  1. Avocado  : 2
  2. Jalapeño pepper      : 2
  3. Green onion/spring onion   : 1 stem
  4. Cilantro : 5 stem
  5. Salt for taste
  6. Lemon    : ½

Method

  • Chopped jalapeno, green onion and cilantro into small pieces.
  • Take the flush from the avocado and smash it.
  • In a bowl add the avocado and chopped ingredients.
  • Add lemon juice and salt.
  • Mix everything together.

Tips: May adjust the ingredients according to taste.

Corn Salsa:-

  1. Corn  : 1 cup
  2. Onion : 1
  3. Cilantro    : 5 stem
  4. Lemon : ½
  5. Jalapeño pepper   : 2
  6. Salt for taste.

Method

  • Cook the corn (do not overcook).
  • Drain the water and let it cool completely.
  • Chop the onion, pepper and cilantro into small pieces.
  • In a bowl put everything and add the salt and lemon juice.
  • Mix everything together. 

Chicken:-

  1. Chicken  : ½ kg
  2. Chilli powder  : 2 T sp.
  3. Ginger garlic paste  : 2 T sp.
  4. Paparika powder      : ½ T sp.
  5. Pepper   : 1 T sp.
  6. Lemon  juice                      ½
  7. Salt for taste

Method

  • Cut the chicken into thin slices.
  • Marinate the chicken with the above ingredients.
  • Preheat the oven to broil into high for 10 minutes.
  • Brush the oven safe dish with oil/ butter.
  • Place the chicken in the dish and broil for 10 minutes.
  • After 10 minutes flip the chicken and broil for another 10 minutes.
  • Cut the chicken into bite size.

For additional filling ( the quantity and selection can be adjusted for individual taste)

  1. Sliced onions, bell pepper, tomato and avocados,
  2. shredded cheese,
  3. sour cream ,
  4. lettuce,
  5.  Jalapeño pepper.For making shell ( for 6-7 counts)
    1. Maida (all purpose flour)     :  2 ½ cup
    2. Oil              : 1 Tbl sp.
    3. Baking powder       : 1 T sp.
    4. Salt for taste
    5. Milk for kneading the dough

    Method

    • In a vessel add the flour , salt and baking powder.
    • Add a little milk at a time to make a smooth dough.
    • Finally add the oil and make a smooth dough.
    • Cover the dough and keep it for half an hour.
    • Take the dough and make 6-7 equal parts.
    • Flatten each ball with the help of a roller pin .To avoid sticking use dry flour while flattening.
      Once made, it should be a little thicker than the normal puri.
    • Heat enough oil in a kadai/ pan and fry the chalupa shell one at a time until golden color.

     

    • Finally fold the shell and add the fillings inside the shell.

Tips:-

For vegetarians, instead of chicken, use 1 cup of boiled (with salt) black OR Red beans
Quantity and selection of filling may be varied for individual taste,
Chalupa will puff up while frying, that’s normal( before putting into the oil use the fork for putting small holes.
