Chicken cutlets are perfect for one dish meals and is reasonably easy to prepare. You can dress them up with any variety of sauces or sides, layer into a sandwich or chop them up for salad. Ideally the same preparation can be applied for any meat. Cutlets made of beef or pork are very common. This preparation uses chopped chicken along with bread crumbs, smashed potatos and spices.
Ingredients
- Chicken : 1 kg
- Chilli powder : 1 T sp.
- Turmeric powder : ¼ T sp.
- Garlic paste : 1 T sp.
- Salt for taste
For masala:-
- Chopped onion : 2 ¼ cup
- Chopped garlic : 2 Tbl sp.
- Chopped ginger : 2 T sp.
- Chopped chilli : 4
- Curry leaves : A few
- Chilli powder : 1 Tbl sp.
- Pepper powder : 2 T sp.
- Salt for taste
- Boiled potato : 2
- Oil : 1 Tbl sp.
- Garam masala : ¼ T sp.
For dipping :-
- Egg white : 3
- Corn flour : 1 T sp.
- Bread crumbs : 1 ½ cups
Method
- Cook the chicken with chilli, turmeric, garlic and enough salt.
- Boil the potato and smash it.
- Mince the chicken.
- In a kadai/pan add the oil and add then onion ,garlic, ginger and chilli.
- Saute the onions, add a little salt and saute until the onions become transculent .
- Add the pepper and chilli powder, fry it for another 1 minute.
- Add the curry leaves.
- Add the minced chicken and smashed potato , garam masala and mix it well and saute it .
Check the salt level. - Saute it for another 1 minute and let it cool completely .
- In a bowl add the egg white along with corn flour and mix all well .
- Now it’s time for shaping the cutlet- Take a big lemon size chicken mixture and make the desired shape.
- Dip the cutlet into the egg mixture and cover the cutlet into the bread crumbs .
- In a kadai/ pan add enough oil to fry the cutlet.
- Once its hot, reduce the flame to medium .
- Fry the cutlet into dark brown color.
Tips:-
Here I took one big onion and two potatoes.
Make sure no water in the chicken while mincing.
Make sure to fully cover the chicken-masala mass with the bread crumbs.
