Pakkavada (പക്കാവട) is a very popular Kerala snack item prepared from rice flour and besan. Its also known as ribbon pakoda due to its peculiar shape. This crispy and spicy snack is a quick make and is typically enjoyable to kids and elders. Its most commonly served as a tea time snack.
Ingredient
- Rice flour : 4 cup
- Gram flour/ besan : 1 cup
- Asfoetida / kayam : a pinch
- Chilli powder : 2 T.sp
- Oil : 2 T sp.
- Salt for taste
- Oil for frying
- Water for kneading the dough
Method
- In a bowl add the rice flour, besan, salt, chilli, asfoetida and mix everything.
- Add a little water at a time and knead a smooth dough.
- Finally add 1 Tsp oil and make smooth dough.
- In a deep bottom pan, heat enough oil for frying .
- Press it through the ribbon mold of a idiyappm maker (see image).
- Press the ribbon straightly to the hot oil and fry it till golden brown.
